When oozing is good

Ooze is a funny word because it’s either a really bad thing (puss from a wound?) or a really really good thing (caramel and chocolate from a cupcake center).

I hate to bring up puss before sharing these photos, but I think you’ll agree they are delicious enough to overcome the gross introduction.

The samoa cupcakes from Sweet Freedom Bakery left my mouth in a state of yearning (for more).

This is the best kind of oozing you can ever hope to come across.

Thanks to google, I found a few vegan (and raw) caramel recipes that seemed easy enough so I got right to work.

I soaked a bunch of dates in water overnight (in the fridge) and they swelled to well over double their original size.

Then I pureed them in the magic bullet using as little of the liquid as possible (a little water was required to get them to blend).

And that’s my base.

Then I wanted to experiment with variations, so I started different blends, including:

  • adding a small spoonful of coconut oil
  • adding cinnamon
  • adding vanilla extract
  • adding a dash of almond milk

The best one (in my opinion) had a bit of both coconut oil and vanilla.

Yum.

It lasts longer in the fridge if you add a squirt of lemon juice to it.

You can literally drizzle it (or pour it) over anything and everything, but here are a few ways I enjoyed it:

  • with fresh strawberries
  • over banana soft-serve
  • on oatmeal
  • in vegan s’mores
  • atop pancakes
  • with apple pie

    probably about a week. i squirted lemon juice on it to help it last (dont worry, if you only use a little you cant taste it in the flavor). apparently the lemon juice helps it keep longer. id recommend making smaller batches more frequently rather than making a large one once. its super easy so its not much of a hassle.

    im not sure what the difference is between a normal date and medjool date…as far as i know medjools are normal dates.
