Butternut bowl

I meant to share this recipe last week.  Better late than never!   Butternut Squash Bowl Ingredients: butternut squash (as many as you want to make bowls) quinoa carrots BBQ tofu (recipe here) avocado Directions: Chop neck off squash so only the bowl portion remains.  Remove seeds and bake. Make BBQ tofu. Make quinoa.  [I used my rice cooker] Grate carrots.  Scoop avocado into a bowl.  Then add another for good measure. Combine quinoa, tofu, and carrots, with the avo and mash everything together.  Then add to already baked squash.   Obviously the squash is… Read more >

RFD hits and misses

It took me 3 hours to decide on what to order from Real Food Daily. It’s hard!  There are raw dishes that bring me to an infant-like drool state, as well as comfort meals that make me feel all warm and cozy inside.  Gah!  What to choose?? In the end I went with the BBQ tofu chop salad, with “seasonal vegetables, barbeque tofu, shredded cashew cheese, romaine, and ranch dressing”, which I bulked up with some pricey extras, including blackened tempeh and avocado. To be honest, the salad wasn’t overly thrilling.  I wasn’t expecting the… Read more >

‘Fus and don’ts

I will never tire of puns.  Ever.  As long as I’m the one saying them, that is.  I don’t have the same policy when it comes to my dad’s or Kyle’s.  Last month I made baked BBQ tofu and promised you all the recipe.  Then I ate it all, took no photos, and realized I suck.  Blogger fail.   No worries, I made it again.  And it was just as good this time.  Here’s what I used: 1/2 block pressed tofu (I used the other half for I don’t remember what) 3 tbsp. of BBQ… Read more >

Sunny November

The weatherman doesn’t know it’s November, but I’m certainly not going to be the one to break the news… I went to the beach this weekend – take that New York.  So after coffee x3, I had a pear & dried cranberry breakfast with my agave nectar & cinnamon on top.  Not too complex of a dressing, but pretty good if I do say so myself.  I had an apple too.  Honeycrisps are all the rage right now, but Galas are still my favorite.   For lunch I used more quinoa and leftover BBQ tofu… Read more >

It’s my weekend and I’ll blog if I want to

Phew! Just finished a string of shifts at the hospital and I’m ready to start my weekend.  So this Friday will be a day of catch up – I’m mega behind in all parts of life, including blogging.  Last time I checked, blogging about Sunday’s meal on Thursday is…what’s the word?…ah yes, a lost cause.  The Foodbuzz festival was no ordinary situation, though.  I scored a whole lotta swag that I can’t wait to share with all y’all.  For instance, this cute lil bugger. A Frog Hollow Farms pear.  I had never heard of Frog… Read more >
