Chickpeas & Bread

I made this for Kyle, not sure how he’d like it.  He is picky about things that try to mock tuna salad (he loves TVP, but won’t try my TVP "tuna" salad for some reason). 

The good news?  He really liked it.  He also said it reminded him of tuna salad.  Maybe it’s been a while since he’s had tuna because I definitely disagree.  This chickpea salad isn’t tuna-esque at all.  But whatever.  He liked it, so that’s all that matters.  Oh, and I think it’s pretty good too.  😉

Quickie Chickpea Salad [vegan, gluten free]

Ingredients:

  • 1 1/4 cup chickpeas
  • 1/3 cup diced celery
  • 2 tbsp vegenaise or canola oil mayo
  • 2 tsp stone ground mustard
  • 1 tsp lemon juice
  • salt & pepper (to taste)

Directions:

Mix and mash everything together until texture resembles a spreadable but chunky salad consistency.

Notes:

You can swap the mayo for hummus.  Try different kinds of hummus for yummy variation. 

Bell peppers are another simple substitution (for celery) to give the salad a little twist.

For a more “fishy” taste, add (~1 tsp of) seaweed.  This is for people really wanting a “tuna” replacement.

In case you were wondering, Turlock Pita bread is the best stuff ever.  It’s sold at our local Whole Foods and I’ve been obsessed ever since I discovered it (a year ago). 

Sadly for me, pairing wheat and beans is often a recipe for disaster (yay FODMAPs), so either I accept that I’m going to suffer for the deliciousness (lame) or eat the chickpea salad separately.  Or make tofu salad instead.

Speaking of Whole Foods’ breads, they just started carrying organic Ezekiel bread and it’s renewed my love affair with sprouted baked goods.  I used to be a devoted consumer of Alvarado Street’s sprouted bread and Food for Life’s sprouted english muffins.  I phased them out when I started making my own bread.  The cost got to be too much.  I plowed through this WF brand loaf (so good!), but haven’t bought another…yet.  As long as there’s a supply of wheat flour and yeast packets in the house, I have no excuse.

    I’ve made something similar but added a little onion before I realized onion isn’t a good thing with my gut. And of course, I used hummus, as you could put hummus on a shingle and it would taste great.

    We don’t have a WF or Trader Joes, as you know since I complain all the time, but I love Food for Life Ezekiel breads. They’re the only ones I buy.

    Haha something similar happened with my friend – she’d been gluten free for several years before me and we both had burgers with GF buns. She thought it was delicious and I thought it was awful because they didn’t taste like real buns. I told her she must have liked them because she hadn’t had regular bread in so long!

    That pita bread is my faaaave! I used to always buy pita at trader joe’s but now I’ll make the separate trip to pick up pita at wf’s (among a few other things) because it is just that. good.

    This looks so fantastically easy! Hubby makes a tua salad like this, he just chucks everything into a bowl and stirs some mayonnaise through. He loves it!

    That’s one of my husbands fave meals. And so easy, I usually add some pickles to give it a bite. I also really like chickpea Waldorf with cranberries and pecans. So good! And I’ll have to try those pitas. Everything looks yummy

    I haven’t thought of using chick peas in a salad like that-I always use tofu but I like how chick peas would add more texture! Happy T-giving!
