A family shower

I (semi) promised my G-ma that I’d post about our baby shower (although you’ll notice I made no such promise about how timely the post would be). What can I say?

This weekend was just plain awesome.  I don’t know what else to say.  My sister came to visit.  My friends threw me a baby shower.  And I just felt so loved.  And fortunate.  Things are good. Thursday night was tree decorating and burrito bar. Lunch Lady

Kyle’s coworkers tease him (in a fun, non-mean way) about his healthy vegetarian lunches.  Apparently he’s the organic, non GMO hippie of his office, just like I am in mine. 🙂 Now his colleagues are wondering when I’m going to start packing food for all of them.  Which I’m considering a victory for veggies everywhere.    Thanksgiving leftovers on quinoa.  Oatmeal & snacks.   Spaghetti.  Crock-pot potato chowder (recipe coming).   Pita SB&J with organic Swanson sunbutter and home-made pluot plum jam.   18 Rabbits gracious granola packet with organic vanilla greek yogurt. Chickpeas & Bread

  I made this for Kyle, not sure how he’d like it.  He is picky about things that try to mock tuna salad (he loves TVP, but won’t try my TVP "tuna" salad for some reason).  The good news?  He really liked it.  He also said it reminded him of tuna salad.  Maybe it’s been a while since he’s had tuna because I definitely disagree.  This chickpea salad isn’t tuna-esque at all.  But whatever.  He liked it, so that’s all that matters.  Oh, and I think it’s pretty good too.  😉   Quickie Chickpea Salad… Read more >

A rough week

Unlike last week’s meal plan, I kept this one a bit more flexible due to the uncertainty (and chaos) on the calendar.  In addition to my usual work schedule, I had a four hour class (for work) and maternity unit tour.  That meant I’d be at the hospital all five days of the week.  I can’t get away from the place!  Kyle was also busy with work – presentations, dinner meetings, etc.  Accordingly, I planned out dinners for all five week days, but didn’t assign definite nights for most of them.  Instead I just figured… Read more >
