Coveting comfort (giveaway)

Last week I teased you all with a post showing off my newest obsession, Gluten-Free Vegan Comfort Food by Susan O’Brien.

My comfort cravings have only intensified in the last week…

Case in point: lasagna, mac ‘n cheese, pizza.  Yeah, I like this cookbook.

Some other recipes I have highlighted for April include: home-made cashew milk, amaranth breakfast bowl, cheesy spoonbread, marinated tempeh, raw cinnamon rolls, and green curry peanut sauce with spinach and red rice.

I’ve already read the entire book from cover to cover (like most people read literature).  And I love it. 

Given the title of the book, it should come as no surprise that all the (125) recipes are both vegan and gluten free.  The variety in the book is stellar – ranging from simple to complex, with bread baking and meatball making.  As a follow up to her first cookbook, this one indicates how to make tweaks for those who can’t find certain ingredients or are allergic to soy.  There are a handful of tofu and tempeh recipes, but there’s also a huge assortment of whole foods based meals – soups and salads, sweet and savory breakfast fare, ethnic favorites, classic side dishes, and much much more.  She discusses the GMO issue as well as why she prefers coconut sugar and maple syrup as sweeteners.  And the intro section is especially helpful for GF/vegan beginners because she explains the basics of each diet and helps you get your pantry in order.

Last Sunday night, Kyle and I had family dinner

It was nice to be back in the kitchen after being sick (and uninspired) the previous days weeks.

We weren’t very hungry, so we went with the book’s Spinach Salad, which reminded me a lot of this salad and baked potato wedges.

First I made candied pecans.  Organic raw pecans may be the most expensive nut in the co-op bulk bin section, so I probably should have picked walnuts instead.  But these turned out delicious, so it was worth the money.

The nuts only took 12 minutes, during which I prepped the potatoes.

Nuts out, taters in, time to make the dressing.

The vinaigrette was a balsamic and dijon blend – light and simple, not overpowering the delicate flavors in the salad.
