Gluten-Free Vegan Comfort Food

In reading this blog, there are at least three things you’ve probably come to know about me:

1. I love vegan food.

2. My GI system is whack.

3. I will never ever ever tire of reading/collecting/bookmarking cookbooks.

This is my latest obsession.

The thing about gluten free cookbooks, is they often have meat recipes.  And yet, many vegan cookbooks have wheat recipes.  So it’s pretty awesome that Susan O’Brien has written some cookbooks for both populations.

I’ve drooled over every single page.

I can pretty much guarantee you will too.

Sweet potato biscuits?  Raw cinnamon rolls?  Millet bread?  Pumpkin pizza crust?

Yes please!

This is the Banana-Nut Bread (made in ramekins instead of a loaf pan).

The only change I made was subbing applesauce for butternut squash puree.  I did this because I didn’t have applesauce but I did have leftover roasted squash.

The bread was truly remarkable, and made the entire house smell delicious.

It was warm and comforting, just like the book’s title suggests.

I’m actually really glad I made them in the ramekins as opposed to the bread pan because having individual portions forced me to pace myself in eating the bread.

Trust me.  It’s a miracle I didn’t finish them all off.  Had I used a bread pan this post may be nothing more than a few images of crumbs.

That’s another thing you can add to the list at the beginning of the post.  I love bread.

Oh!  I almost forgot to tell you about the sauce I poured on top of them!

  • home-made peanut butter
  • fancy cocoa powder
  • almond milk

    So mean for you to tease with those images and not include the recipe, but I suppose that gives me an excuse to check out the book as I also a) love vegan food and b) hate my screwed up GI system. But question–do you mean you subbed in squash for the applesauce?

    At any rate, I’m going to have to check this book out this weekend. Hope you’re feeling better!

    That looks delicious!!!! I have a similar issue with my intolerances because I can’t have gluten or soy! Right now I still eat meat but I’m trying to find ways to eat less, I just hate the environmental impact the meat industry has (not to mention the treatment of the animals and the drugs used), and buying grass fed and local is usually out of my student loan budget!

    OHMYWOW. I want that so badly right now! Added this book to my Amazon basket! I wonder how it would taste w/ some protein powder added to the mix, I might not feel quite so guilty eating it once a day then… 🙂

    Looks like a great cookbook! Though not GF, many of my readers are, so I love being inspired to master GF cooking techniques. I agree that the drawback is often that these books are rarely vegan–the baking recipes almost always contain eggs–so that’s a no go. I’m inspired to try this one.

    actually its not very soy heavy…there are a few tofu recipes, but not many. a few tempeh recipes, too. she calls for coconut milk in most recipes, which i exchange for almond and they work fine. she also notes the importance of choosing non GMO products and tells which brands she uses. there are a few that do include soy “cheese” but she notes ways to work around those as well as non-soy alternatives. its got great baking recipes too which im so excited to try…millet bread and sweet potato biscuits!

    yup. squash for applesauce…i could taste the squash a bit, but its still a rather sweet puree so it worked.
