Easter happenings

I almost titled this post Easter “hop”penings.  Too cheesy?  I agree.  Every once in a while I’m able to deny the puns (sorry dad).

The night before Easter Sunday we had some family visitors come over to see P…and bring us dinner!

Mine was a little like a nicoise salad with green beans, red potatoes, eggs, and a vinaigrette dressing (Girard’s light champagne), but it also had chickpeas, beets, and cucumbers as well. 

Best part of all was that I didn’t have to do any of the prep!  I set the table and Kyle poured the wine, and that’s all.

They brought this delicious berry galette for dessert too.

The next morning we (Elise & P) got up bright and early.  Kyle slept in a little more (til 7:30) after which it was Easter basket time!!!

I made myself oats with peanut butter stirred in and trail mix on top.  meanwhile Kyle went on a run with a friend.

We kinda have an every other day exercise routine going on.  If Kyle runs one day, I’ll run the next.  Although most of the time we will go for a family walk rather than solo running.  I guess it just comes down to who is going stir crazy the most on any given day (usually it’s me).

When Kyle got home I made him breakfast – this apple cinnamon roll (heated up and topped with extra peanut butter) and a banana strawberry smoothie (with Chobani 2% banana greek yogurt, almond milk, Arbonne vanilla protein powder, home-made strawberry jam, and ice). 

And then this happened…

Ok.  I can hardly even look at these without cracking up (and the same was true when we were getting him dressed and taking photos).  We may be the worst parents ever.  Kyle thought he looked like a girl.  I thought he just looked plain old ridiculous.  Not that it helps legitimize this dress up session, but Kyle lived in the south for much of his childhood (ATL represent) and his friends gave us these when P was born.  If not Easter, when?  [Side note: this is actually the least absurd of the options because there are two other outfits they sent us that we didn’t choose]

Ethel came over later to make us vegan (tofu) pancit.

I paid close attention so I could earn my Filipino cooking credit. 

I pressed the tofu while she sliced half an onion.  Then we browned both in a little bit of olive oil.

Next we added veggies, carrots (sliced into matchsticks), celery, and cabbage.

Then we cooked the rice noodles (in batches) in veggie broth, before adding them to the pan.

Threw in some tamari and most of the broth, sliced green onions to garnish, and served!

Happy Easter lunch. 

March Madness (and P) kept us entertained for the rest of the afternoon, and soon Ethel had to leave.  Kyle and I loaded up the stroller and headed out for a walk, but the weather was crap so it got cut short.  We went to Starbucks so I could get an afternoon treat (decaf soy misto).

I sncaked on granola once we got back and eventually made dinner.

I seriously stared at the fridge for-eh-ver trying to sort out what I felt like.

Nothing really sounded appealing.  I ended up making an egg salad sandwich that I scooped atop two pieces of toast and greens.

Apparently Nasoya recently changed their nayonaise to make it creamier.  I liked the old stuff, but this was just as good.  Even though I now eat eggs, I still don’t like mayonnaise.  Plus egg salad with real mayo seems excessive – even for Easter.

This had:

  • 1 hard boiled egg
  • 1 celery stalk, diced
  • 1/2 tomato, diced
  • 5 baby carrots, diced
  • 3 tbsp nasoya nayonaise
  • 1 tbsp honey mustard
  • 1 tsp whole ground dijon mustard
  • 1/2 tsp lemon juice
  • dash of paprika

All mixed up and heaped on toast and greens.

Finished the night off with dark chocolate, medjool dates (lots), and candied ginger.

Oh and then I made this for the next morning.

    You might be better off covering P in those Pacman bandaids than that little boy blue ensemble :/. My MIL used to give me duds like that for the boys – they always just looked like they wish they could be peeled. 🙂

    I happen to like the outfit, but then again, as a born and bred true southern girl, it looks like what I’ve seen on about half of all the babies all spring and summer long my whole life! I didn’t realize it wasn’t normal other places!?! No matter what he wears P is a-dor-a-ble!

    Awww… PacMan looks so adorable! I am going to have to try Ethel’s pancit because I have not earned my Filipino cred (and I’m half Flip) with pancit. I can make lumpia every which way though, and adobo but those are easy dishes. My pancit noodles usually get too soggy.

    That egg salad sounds delicious!! I actually prefer vegan “mayo” over regular mayo any day. I cannot stomach the “real” stuff.

    Smocked dresses/jumpers and HUGE bows for girls are required down South. I refuse. I seriously think my kids were the only ones NOT wearing that stuff this past Sunday. Although I grew up in Nashville, my parents are from New England and the Midwest – it’s not in my blood.

    My family all lives in Alabama, so I, too, am very accustomed to seeing such outfits on baby boys. My nephew Max (7 months old) wore a very similar light blue number with a big square collar for Easter. However, I think P wins for ridiculousness with the matching hat!

    Dates are amazing. I could polish off handful after handful in a single day. Combined with PB– they are amazing! I always get strange looks from my friends when eating them though… they think they look gross but man are they missing out!
