How about one photo for each meal?

Crock-pot spiced brown rice with almond butter.

In an effort to bring some variety to my oat routine (the horror!!) I made brown rice this week.  The crock-pot is just as easy because I leave it to cook on low overnight and wake up to warm whole grain perfection.

Kale salad with seitan.

No explanation necessary.  These two foods will never cease to amaze me.

The Cookie Department Great Full (vegan) cookie.

You would never ever know this cookie has sweet potatoes in it.  It was soooo good.  The sweetness of the cranberries combined with the salt crystals on top made my taste buds go wild.  This company just debuted their line at ExpoWest and I am so happy to support them and help spread the word.  The Cookie Department was founded by Akiva Resnikoff, a Berkley boy, with a passion for creating delicious and functional desserts.  He hit the nail on the head with this one.  It.  Was.  Awesome.

Asian noodle bowl with brown rice noodles, tofu, kale, and carrots.  The tamari tahini sauce brought it all together.  Winner, winner, tofu dinner.

No evidence of dessert, but it was dark chocolate with candied ginger.  Standard.

Have you ever “snuck” healthy food into baked desserts?  I’ve made black bean brownies, which turned out great, but that’s as far as I have gone.  I have always wanted to try doing something a little more risky though – like broccoli in cookies.

    question for you — i’ve recently gone full vegetarian, and while i know how to properly fuel myself and all that jazz, i wanted to ask about tofu. i love it. a lot. it’s quite creepy, actually.

    i’ve heard/read that i should watch my intake because of soy yadda yadda. should i keep my tofu intake to 1x/2x per week, or can i eat it more frequently?

    Sweet potato … cookie…yes please!

    I made an avocado sweet bread once, I keep meaning to make it again, but avocados don’t stick around that long in my house. I’ve also made black bean brownies and they were a wonderful treat.

    The spiced brown rice with almond butter, and the Kale salad with seitan look interesting. As for the cookies I have found a great local store that makes the best tasting vegan cookies. http://Nocookie.com/ Wheat free, no sugar, or dairy… and they taste great!

    i think (and this is just me personally) that the soy concerns stem from the fact that nearly every packaged food has over-processed soy and corn in it. and since its GMO crap (like soy isolate) its not good for you. so when they do studies, its usually on less informed people who eat a lot of “health” bars and stuff like that. thats the reasons soy is in the hot seat. tofu – especially the kind thats made from non-GM organic beans is pure and i feel like its not something that needs to be regulated. i consider it a quality ingredient that can be eaten as often as you want as long as youre mindful of the rest of the soy in your diet. if tofu is the only way youre eating soy, i think youre fine. id pass on the bars and minimize the soy beverages though.

    I’m a big fan of using silken tofu for desserts that I make–it makes for perfect pudding.

    So, I don’t bake very well, but I’ve definitely snuck healthy food into other desserts.

    Avocado is an awesome base for chocolate pudding. When bananas get mushy, I peel them and freeze them and then blend them up with unsweetened cocoa powder for a yummy “ice cream.” Eggplant makes a good cake– It’s very zucchini bread-esque.

    I remain to be impressed by the black bean cake and sweet potato cookies… I will try them both soon!

    I always put healthy things in desserts, the trick is not to advertise it. Zuccinni chocolate cake, beetroot brownies, lentil cake…. ha I have fooled many an innocent bystander.

    Love the sound of those cookies 🙂

    nope, never snuck healthy food when I’m baking. Then again, I never bake. I’m kind of curious about the whole chickpea cookie dough phenomenon though. Have you heard?

    I’ve never snuck healthy foods into desserts. Is green oatmeal a dessert? Snuck in a little spinach in my overnight oats 😉 wasn’t so sneak though – oats were bright green!

    I always try and drift away from the oats as well to create some change- But never lasts long! There is just SOMETHING about oats!
