Thai in twenty

Are you ready for the easiest meal ever?

  • frozen stir-fry veggies + 1/4 cup water
  • extra firm tofu
  • 2 tbsp peanut butter
  • 2 tbsp coconut oil
  • Asian spice mix/Chinese five spices blend (I used 365 Asian seasoning)

Add the stir-fry veggies, the water, and the spices until the veggies have thawed.  Then add the rest of the ingredients.

Serve over rice.  Bam! – you’re in Bangkok – and dinner is done.

Love the combo of coconut oil & nut butter on either raw or cooked. So “filling”.

Did you press your tofu, or just toss it in? (Mine always crumbles if I don’t press it) – and this meal WILL be made this week. Easy peasy.

Mmm…that sounds delicious! I love anything that is (a) packed with vegetables and (b) reading in 20 minutes, lol! Yummy :-) Oooh, you’re going to Thailand – so says HHH Dad?! my dad’s on crack. we are going to thailand. we were going to but couldnt get flights in our price range. we will eventually make it there though. im determined to!

lately i’ve been SO obsessed with coconut oil its ridiculous like there is nothing its not good on haha. well that and peanut flour but thats nothing new. so this post and your preev post have been pretty fan fav of mine
