Trick or (vegan) Treats

I really enjoyed all your giveaway entries.  Sounds like we are all very similar in what we enjoy doing on our days off – relaxing!  As per random generator, the winner of the $65 CSN stores giveaway is Grace, who said:  “I would definitely do a ton of gardening and then of course, cook! There is nothing better than tasty food that you can take the time to prepare.” Congrats Grace!

I have yet another giveaway coming soon, but I’m kinda up to my knees getting adjusted with my new work schedule.  Until then, here’s a yummy vegan recipe to satisfy any sweet tooth.

The vegan fudge I made last week was going fast…

So I knew I had to make another delicious vegan dessert, or Halloween would be treat-less.  That would be a cruel trick to play – and we can’t have that!!

I decided to whip up a dessert that’s been on my to-make list for quite some time.

I was inspired by both Mama Pea’s & Averie’s recipes, but used a fudge base similar to Evan’s, and then winged it on my own from there.

Vegan Chocolate Peanut Butter Cups

Chocolate layer

  • 1 cup vegan chocolate chips
  • 1/2 cup NuNaturals stevia baking blend
  • 1/4 cup coconut oil
  • 1/4 cup almond milk

Peanut Butter layer

  • 1/4 cup creamy peanut butter
  • 1/4 cup NuNaturals stevia baking blend
  • 1 tbsp nutritional yeast
  • salt (to taste)
  • almond milk (to thin to appropriate consistency – this is dependent upon what type of peanut butter is being used)

After pouring the first layer of chocolate fudge base in the baking cups, I waited for it to cool a bit (~5 min in the fridge) before I added in the peanutty layer.  After another brief pause for the layers to cool together, I then added the last chocolate layer on top.

I had some extra chocolate after the PB portion ran out, so I got a little creative with it.

Trick or treat?  TREAT!!

We had normal candy to give out just in case we had some trick-or-treaters, but I think these vegan imitation Reese’s PB cups and/or dried cranberry coconut chocolate cups would have been better in every sense of the word (most notably in terms of nutrition).  Aside from the obvious differences (my treats were free of HFCS, chemicals, and whatever nasty preservatives ensure a 5 years shelf life), mine were also made from scratch, using real ingredients.  Taste-wise, I wouldn’t kick ‘em out of bed either…

But, to be honest, I’m secretly glad we didn’t have any kiddos knocking on our door, because now these vegan treats are allllll mine.  🙂

Would you let your kids eat food hand-made by a stranger? I don’t think I would.

What if your neighbor was a hippie with a garden, separate recycle bins, and told you they were vegan? I’m still going with no.

Too bad.  Looks like Snickers, Reese’s, and Kit Kats aren’t going anywhere anytime soon…

    To answer your questions: no and no! There used to be a guy that gave out donuts from a local shop and I wasn’t even allowed to eat those, letalone “homemade” treats. Besides, who would want to part ways with those lovely ones you made?! Since I am not a huge chocolate fan, I might try using butterscotch chips in place of the chocolate…and that PB layer is going to be hard to resist…yum!

    I’d eat food homemade by you haha. Buuuuut I think my dad would have thrown that in the trash the second I got home. And my mom would have dug it out and eaten it herself. The do look amazing though!!

    I’d eat food from a food blogger such as you, but no one else 😉 My parents always went through my candy as a child and picked out what could’ve been bad, haha. Good parenting, I’d say.

    Ahahah.. I love the second question. I agree though, I wouldn’t let my kids (if I had them) eat homemade goods from a stranger. Maybe from a neighbor, though, if we were homegirls. Your cups look delish.

    I think I’d let my kids eat from a blogger but not a total stranger. I might let Mrs. Fields herself give them cookies because I”ve never actually met her so she is a “stranger”. But come on, who turns down a cookie from Mrs. Fields?

    Your treats look delicious! I haven’t tried those recipes yet, but they look so good. I would not let my kids eat homemade treats from strangers. It is sad, but really you can’t trust anyone and that is the bottom line.
