Crib and notes

My ability to sleep normally is gone.  And I’m fairly certain it’s going to be that way for the rest of my life.  Despite my state of perpetual exhaustion, this weekend was f.u.n. We ate out twice on Saturday. For lunch we went to Seed Bistro in Venice, which is rapidly becoming my favorite vegan spot on the Westside.  I’ve never had a mediocre meal there – only the best.   I finally branched out and got something that wasn’t the Asian Kale salad.   This is the Creamy Caesar, with romaine, croutons, and a… Read more >

Leftovers multiple ways

Last weekend we went to Veggie Grill for takeout.  You get a free entree for your birthday and since you have until the end of the month to use it, I was almost out of time!  I decided to try something new (I figured since it was free I should order something that I wouldn’t ordinarily get).  I hate to say it but I may have OD-ed on the All Hail Kale Salad. I didn’t feel like a salad, but I didn’t want a sandwich or burger either (I wasn’t gonna do the wheat thing,… Read more >

Curry Vegetable Couscous with Cashews

This is another one of those meals that came together coincidentally.  After I scoured the pantry and fridge for a few minutes, I created my own little Top Chef challenge and came up with this.   Curry Vegetable Couscous [vegan, gluten free option] Ingredients: 1 cup (uncooked) couscous (I used Lundberg Farms’ GF brown rice couscous) spinach tomatoes 1/4 cup plain almond milk 1 tbsp curry powder 1 tsp garlic powder 1 tsp onion powder pinch of each cumin, turmeric, paprika, dried ginger 1/2 cup roasted cashews Directions: Cook couscous according to instructions.  I used… Read more >

Riding the carbohydrate rollercoaster

I’ll admit it, I’m a carb lover.  I don’t think this is a bad thing at all.  Brown rice, oats, quinoa, sweet potatoes, whole wheat, etc. – I think they are all part of a healthy, well balanced diet.  So are fruits and vegetables.  It’s hard to imagine a low-carb plant-based diet.  How would that work exactly?  Well, that’s the exact dilemma I was faced with last week (after failing my first GTT).  While I was waiting to take my second GTT, I tried reducing my carb and sugar intake to see how it might… Read more >

MoFo recap

Since I returned to eating eggs…a while ago…I no longer consider myself vegan.  I’m basically a dairy free vegetarian.  But that doesn’t mean I don’t like vegan food.  I love it actually.  I eat it often.  And seeing as October was vegan mofo, I decided to recap some of my daily vegan eats.  October 1: Spaghetti Squash with Marinara & Tofurky   October 2: Quinoa & Seitan with Red Almond Sauce   October 3: Mexican Layered Casserole October 4: Blue Plate’s vegan white bean soup and gardenburger salad October 5: Pumpkin Cheesecake Pie   October… Read more >
