Current events with a day food log

This whole Lance Armstrong business really bums me out.  I always believed his denials.  I guess I just wanted him to be telling the truth about being clean so badly.  I read his books way back when they came out and found his story so inspirational.  I felt so bad for him when his medals were stripped.  And now it turns out he was covering up illegal drug use all along.  Sucks. Staying savvy at Costco

How smart is Costco?  I mean, they charge for membership.  Then they entice you with samples.  And they have EVERYTHING.  All for a cheaper price than you’d find (almost) anywhere else. But here’s the downside.  You don’t need a 10 pound block of cheese or 50 veggie burgers at once.  Unless you’re about to cater a party, for vegetarians, that’s an insane amount of food to have at your house.  And really, who has enough fridge/freezer space for that?  So how do you use Costco (or Sam’s Club or whatever bulk store you shop at)… Read more >

Assorted eats

Not a very glamorous title, but it’s all I’ve got.  Explanations following the things that I think need them. Dinner and the next day’s lunch (for Kyle).    Pumpkin sage ravioli bob-bob-bobbing their heads up to say hi.   Minimalist toppings include olive oil, parmesan, & peas.   Vegan carrot cake.  I froze it after our baby shower.  The cake part was good, the frosting wasn’t my fave.  FYI, this cake is made by Fabe’s and sold by Whole Foods.  It’s gluten free and vegan, so the fact that the cake part was good is… Read more >

Mushroom & kale rice bowl with peanut ginger sauce

  Here’s the deal with that Portobello & Kale Sauté with Peanut Ginger Rice… It was really good, but totally jacked up my GI tract.  Would I eat it again?  Ugh, I wish I could say no, but I know I will.  The leftovers are in the fridge just waiting for me to give in to my moment of weakness.  Sure I could offer them up to Kyle (he loved the meal as well and has been in a huge kale craving phase lately), but I’m kinda selfish when it comes to certain things (like… Read more >

The weekly menu

Monday Risotto Tuesday Quinoa quiche.  It’s a cheap and easy staple.  Not much else to say. I wish I could tell you this provided leftovers…but we are oinkers. Wednesday Curry stir fry with quinoa. This was the star of the show.  I’ve been working on actually going through our pantry and (gasp) using all the stuff I’ve been hoarding since the 2000s.
