About Elise

I’m a nurse. An exercise lover. A whole foods connoisseur. A health enthusiast. And I have IBS. No need to cue the sappy violin music yet... I’ve found that eating a mostly plant-based diet has allowed me to continue to live and love life to the fullest. Although moderation isn’t something I do well, I’m 100% devoted to giving my body pure, wholesome, quality food. Nutritious and delicious, all the time. Hungry Hungry Hippie is a way for me to share my daily dealings with food, fitness, and everything in between.

Leftover mash-up

I’m sorry I didn’t do leftovers justice here on the blog, but we didn’t have too many! I gave the kids pumpkin pie for breakfast the day after Thanksgiving because that’s kinda what you do right? But beyond that, the stuff my parents sent us home with got eaten before the weekend was up (mostly by one member of the house, cough cough, Kyle). He lives for my mom’s lima and green bean casserole! Anyway, I did have a bunch of the potato and cauli mash to use up (which, if you recall, wasn’t a… Read more >

Breakfast lunch and dinner

I kinda fell out of the habit of blogging for a second there…blame it on getting back into the swing of the real world and dragging my feet during the process. I started the day with a cinnamon raisin english muffin and butter. For lunch I made a Brussels sprout saute and then added cheese and almonds on top. These almonds are THE BEST you will ever taste. They are perfectly coated in olive oil and (lots of) salt and I just can’t get enough of them. For dinner we had steak, risotto and sautéed… Read more >

Secret special

If you know, you know. And if you don’t…allow me to explain. If you are in the know, you get an email from Nugget every Wednesday with a code for something deeply discounted that you can use the following Friday or Saturday. Many times it’s not something I care about or am interested in, but they do have some awesome ones. My personal favorite is when they do 50% off bulk bins. I go to town on those days. The second best is $1 chocolate bars. They rotate brands – in the past they have… Read more >

Unexpected shell soup

How was everyone’s holiday? My kids had the whole week off which felt like both a relief and a burden – the freedom to fill our days with the activities we enjoy on our own timeline is something we have greatly missed, but I’d be lying if I said it was all easy breezy. The absence of any direction or agenda left us a bit unmoored at times. On the whole though, it was nice, and the return to (home) school will be difficult. I had plans to make stuffed shells but decided to make… Read more >

Turkey time

This sweet potato casserole was alllmost my favorite food of the day…which will surprise nobody since it’s basically a dessert. The actual number one spot is (and will always be) reserved for chocolate pecan pie. We had a nice low key morning at home, watching the parade football while doing puzzles and eating but ended up going to my parents’ house in the afternoon for a very small and safe gathering. It was good for the kids to have a change of scenery and play the same games in a different backyard 🙂 Ok, so… Read more >
