About Elise

I’m a nurse. An exercise lover. A whole foods connoisseur. A health enthusiast. And I have IBS. No need to cue the sappy violin music yet... I’ve found that eating a mostly plant-based diet has allowed me to continue to live and love life to the fullest. Although moderation isn’t something I do well, I’m 100% devoted to giving my body pure, wholesome, quality food. Nutritious and delicious, all the time. Hungry Hungry Hippie is a way for me to share my daily dealings with food, fitness, and everything in between.

Cookbook recs

Waffle week went great! As if you had any doubts. 😉 If you are looking for a great cookbook to gift someone (or yourself) this holiday season, let me recommend this one. I’ve had it for over a year and I continue to look to it for inspiration whenever I need something new that is still classic, balanced, and won’t take forever to get on the table. I made this Thai dish from it last week but doubled it so we had it again this week. The kids loved it and were SO thrilled when… Read more >

Mulled wine

Here’s how this whole thing started. I decided I needed to find an alcoholic drink for winter (meaning something warm) because as much as I love kombucha, I can’t drink a cold beverage without it causing my body temp to drop to sub 80 temps. I already have a cup of tea every afternoon and then again every evening. Most of the time it purely to warm myself up. Am I a lizard? Alas, I have settled for now on this… Why are soy creamers so hard to find now. Everything is coconut milk this and oat milk that. Keto… Read more >

My first carrot cake

This past weekend was our special two-on-one with Miss V and we had a blast! Like last time with P, we catered the weekend to what she likes best of all, like building legos, doing our nails, playing at the park, and baking. We watched tv in the hot tub and stayed up late with hot cocoa. I’ve had this carrot cake recipe bookmarked literally since the day it was published back in 2018. Which may sound insane to some (slash most) people, but I think there are others out there like me…are you guys… Read more >

Repeat-able

Oops, I made it again… I hope you sang that a la Britney. This cornbread stuffing was such a huge hit the first time, I had to make it again. SO GOOD. And while we are on the subject of repeats…here are a few things that have graced the blog plenty of times before, that I’ve enjoyed yet again recently. First, buttery english muffins. I’m committed enough to call this my fall/winter breakfast of choice. Also, the farro and kale salad. Meredith cheese was on sale last week so you KNOW I stocked up. It’s… Read more >
