Cheesy Scones & BBQ tempeh

Toasting on top

I discovered a way to cheat the system.   Now you can get blackened toast marks like you get from grilling burger buns…by putting them on top of the toaster.  I’m probably not rocking the boat with this discovery, but I thought it was pretty clever (pat on the back, Elise).  You don’t have to smash the buns shoving them into the toaster.  And you don’t have to wait for your oven to heat up.  It’s super quick and yields nice toasty buns with legit char marks. A big day

Kyle’s on his way home!  Weee!  After an eternity on my own, I’m re-he-he-heeeeally looking forward to his return. Two themes

When my hands are tied up and time is of the essence, I’ve been relying pretty heavily on two things. Theme number one: snack plates Veggies, meatless meatballs, Stubb’s BBQ sauce, Mary’s Gone twigs, sweet potatoes, daiya cheese, GF tortillas… This was a meatless meatball round (WF / 365 brand is bomb).  I go through phases with faux proteins.  Beyond Meat strips are a fave.  So are hard boiled eggs.  But sometimes I just stick to nuts instead of a “meat” snack item. BBQ jackfruit

I’d never even heard of jackfruit until I moved to Los Angeles.  Apparently it’s a pretty popular vegan replacement for meat in dishes that would otherwise use shredded chicken or pulled pork.  Something about the stringy consistency.
