Brrrr…time for chili

Nacho fun

I’ve been on a Mexican kick.  Namely a nachos kick. I know I said I was going to show all my eats, day by day, but the highlight of this day was this guy, so why bother with the other stuff.   It’s nacho time!!! Mex for all

  You’d think after a week of breakfast burritos Kyle wouldn’t be stoked for Mexican night, but you’d be wrong.  [The above is a burrito I made for him with Boca veggie chik’n burgers, salsa, & cheddar]   For both of us, I made this huge thing of brown rice, pinto beans, and salsa because it allows for flexible meal creation. brown rice –> 2 cups in the rice maker pinto beans –> 1 cup in the rice maker salsa –> 1/2 cup of Sabra’s mango peach salsa (!!!) The bad side of perfection

Don’t let “perfect” be the enemy of “good”.  That’s one of my favorite phrases.  We could all do well to remember it, which is why I’m posting it here.  I get questions and comments all the time about foods that I show on the blog or use in recipes that are/are not FODMAPs friendly.  I’m not perfect.  I try to eat a low FODMAPs diet most of the time and I do pretty well with it, but I definitely eat things that I know are FODMAPs.  Sometimes they are things I know I hardly react… Read more >

Happy couple & happy goats weekend

Another weekend filled with outings and travel and showing off our little man!   Starting with a leisurely Friday.
