Breakfast for one

This was my breakfast last Sunday.  Then again on Monday.  And then again on Wednesday.  [Tuesday I went back to the egg and toast routine] There’s no saying how long this will last…   Just one massive pancake.  The whole batter poured into the 8 inch pan. It’s so fun to eat when it goes on forever and covers the whole plate.  These photos are semi-deceiving.  These are large dinner plates…making this a pretty sizable flapjack.   Oat Peanut Pancake [FODMAPs friendly, gluten free, dairy free; serves 1] Ingredients: 5 tbsp oat flour (certified… Read more >

Choose your own

Remember the choose your own adventure books?  Ah, the good ‘ol days.  I don’t remember finding them remotely good or interesting, but it was still fun to pick which direction you wanted the story to go.  This “risotto” is kinda like that, in that it’s a blank slate, waiting for you to make it your own.   Here’s why it’s “risotto” in quotation marks (and not real risotto).  I used two grains (brown rice and buckwheat) in it.  From what I understand about risotto, it’s a pain in the ass to make and you basically… Read more >

Banana Bread Biscuits

I made these a while ago but I guess I just forgot about them.  Just like the batch of two scones I made, this recipe had a small yield.  Only three biscuits, actually. I guess they’re biscuits.  They’re not as buttery though.  More like baby banana bread rolls.  Who knows.  I had them for breakfast, sometimes plain, sometimes with nut butter.  But they’d be good with Earth Balance and jam too.  That was my favorite toast topping growing up.  Not butter OR jam, butter AND jam.  Did anyone else do this too?  Is this… Read more >

Home for the Holidays on Christmas

12/25/12 Christmas morning!!!!!  Wee!!!  [It never gets old] I slept horribly all night, so I was up before anyone else.  Rather than peak at what Santa had stuffed in my stocking, I set to work on breakfast.  I made a huge batch of waffle batter and started the coffee (and made enough noise that Kyle and my dad were up soon thereafter). Once my sister and mom joined the party we all opened our stockings. Then we took a breakfast break. Waffles with the toppings: raspberries, blueberries, maple syrup & Earth Balance My sister made… Read more >

A non chocolate dessert

Pear + tree.  No partridge.   I made this dessert for Kyle and his response (lots of moaning) was so shocking, it was as if I gave him a bowl of Reese’s cups and said “dig in”!  Fruit based desserts are so outside his normal.  His cravings are very simple: (1) chocolate, (2) peanut butter, or (3) chocolate with peanut butter.  Sweet Buttered Pears with Cocoa Ingredients: 1 pear 2 tbsp butter (Earth Balance) 2 tbsp sugar pinch of cinnamon (optional) pinch cocoa powder (topping) Directions: Chop or slice pear.  Heat butter in a… Read more >
