House-warming & Memorial weekend

This past (long) weekend was important for family time because Kyle headed back out of town for business on Tuesday morning (after being away the previous week).  Gotta soak it up for the few days he’s around!  I’d be lying if I said it wasn’t hard, but since his start-up is young and fragile, it’s important to take advantage of these opportunities so the company will continue to thrive.  Growing pains are good.  As I type this he is en route to Colorado…10 hours into the 18.5 hour drive.  Ouch. I just wanted salad dressing

I feel like I’m clinging onto summer with this breakfast.  Home-made banana pancakes with strawberries and peaches.  This was my first sweet breakfast in a long time.   I finally finished off that massive batch of vegan gluten free pancakes that I made a while back, so I had to do actual work in the morning for these.  The effort was worth it, but I wish I’d had the energy to make a huge batch so there were leftovers.  Part one of lunch was half a sweet potato with tofu scramble.   I’ve been on… Read more >

Eating the garden

Recently I’ve been making the fruits of my labor into delicious meals. I don’t know where this love for pesto suddenly came from, but it’s really nice to be able to pick your own food and prepare it in the same day.  Thriving basil and parsley plants for the win! Shifty

I have been completely lagging in showing off my work eats.  Packing up my food for the hospital is an art form, but it’s one I’ve perfected.  Blogging about them, however, takes more time and I’m always exhausted when I get home from 12+ hours on my feet.  And of course, there was the unexpected drive down to Newport Beach this weekend…so I’m definitely behind.  Not to throw excuses at you, I’m just saying, I have weeks of hospital food stored up.  How excited are you!?  Ha!
