ground "meat"

Not my finest hour

I woke up at 6:50 am today.  FYI, my shift starts 7.  Uh.  Oops?  After having a mini-stroke, I got my butt in gear and hauled ass to work.  If there’s ONE THING you should know about me, it is this: I HATE CHAOS.  Odd, given my job right?  To be honest, I feel like it is actually this quality of my personality that’s one of the reasons I thrive in the ICU.  I think the constant drive to create order and stability works to my advantage in such an intense setting.  And yet, in… Read more >

One year old.

Wow.  Time flies when you’re having fun blogging about it.  It feels like just yesterday I stumbled across this amazing community of foodies and decided to begin a blog about my adventures in the vegan kitchen.  Who would have known the decision to write (almost daily) about my food/exercise/etc would have impacted my life the way it has?  I certainly did not. And yet, here I am, a YEAR later, with a ton of new friends, having tried food I hardly would have known existed a year ago!  Thank you to everyone who has ever… Read more >

I’d rather be in Boston

I wouldn’t even know where to begin.  It was such a stressful (work filled) weekend, I’m just glad it’s over and I made it through.  I am far too exhausted to type, so I won’t be sharing the latest ICU happs.  Instead, I’ll stick to the food. Lettuce cups

I feel like this post should come with a warning. If you’re the jealous type…then look away, because this post may just make you wish you were engaged to my fiancé 🙂 I’ll post more on the rest of my weekend meals later, but Sunday night deserves it’s own (detailed) explanation.  Kyle told me that he’d have a surprise waiting for me when I got home, and sure enough, I was totally blown away! He used the recipe for PF Chang’s lettuce wraps to replicate their famous dish – with a vegan (and HHH) twist. … Read more >

home for the holidays

Airport on my way home!! WTF were they thinking when they made the new terminal for JetBlue – no Starbucks?! I’m not a fan. They DO have all these new creative dining places though, with lots of potential options beyond fast food (which is nice), including salad and hot food bars. But still, at 7 am that is little consolation for the lack of soy for my coffee. So I ended up going to Dunkin’ Donuts 🙁 and ordering a small black coffee and a HUGE water. I’ve got a aisle seat, kids, no worries! Here’s my… Read more >
