Vegan. Gluten free. Mega nutrients.  And deeeeelicious. Stuffed Sweet Potatoes [vegan, gluten free] Ingredients: 2 sweet potatoes 1/4 block (~4 oz.) firm tofu 1/4 cup hummus (I used Sabra’s spinach & artichoke) 1/4 cup chopped greens (I used frozen chopped collards) 1 carrot, shredded salt & pepper (to taste) Directions: Pre-heat oven to 350 degrees. Scrub potatoes, poke with fork a few times, and microwave for 6 minutes (rotate half way through). Old to new

You all know I’m frugal.  And that I like re-working leftovers.  This is not news. So when Alene & Ethel sent me home with extras from the shower, I was really excited to transform them into new dishes not have to cook for a while. Orzo salad with sun dried tomatoes. Quinoa with edamame, kale, and tomatoes. Both of these dishes made their way into the weekly dinner plan immediately. What can I say?

This weekend was just plain awesome.  I don’t know what else to say.  My sister came to visit.  My friends threw me a baby shower.  And I just felt so loved.  And fortunate.  Things are good. Thursday night was tree decorating and burrito bar. I repeat, no work this weekend

I was off this weekend (which is abnormal since I was also off last weekend and I usually have an every other schedule).  So exciting!!   Saturday morning.  Frothy mocha flavored milk.  Home-made bread.  Toasted to oblivion.  Buttered up the yin yang.  Fried egg on the side. Farmer’s market. Restoration Hardware baby & child grand opening.  They have a dresser named after me (too bad these are all too expensive).  Need to hit up some garage sales asap. College football.
