Ice cream maker!!!

Going old school with the “what I ate” style blogging. For breakfast I went to Crepeville with a coworker.  She was just getting off (a really crappy) night shift, so she vented to me and I listened.  P spent the morning throwing things from the stroller to the ground.  Whatever keeps you amused little man.   I got the tofu scramble which comes with both hash browns and a bagel.  The portions at Crepeville are massively massive (LOVE!!!) so I took home the leftovers for Kyle.  Which is the bagel you see above. Me and P

Kinda unintentionally took a little break from the blog.    I wasn’t overly busy, still doing the same work/parent thing, but I just didn’t feel like writing an (uninspired) post about nothingness so I left the computer off.  And that’s that.  Nothing exciting happened while I was away though. For dinners:   I made this creamy dijon tempeh casserole dish again.     This time with 3 blocks of tempeh (I 1 1/2-ed the whole recipe) in an 8×8 casserole dish.  Boom.  Party in my mouth.   That’s taken care of a few dinners/lunches.  Even… Read more >

The every-day eats

I am bad about taking pics of my daily eats (like I used to) but I get requests for them more than the “real” recipes…so here are  bunch of the quickie things I throw together on the regular.  From last week… Millet with sautéed spinach, baked tofu & avocado I made the millet in the rice cooker, sautéed the spinach with sesame oil and tamari, and used Wildwood tofu. I made extras.   I also re-made this salmon pasta, but in a HUUUUGE vat.   Lots of veggies to use up?  Throw them in!  I… Read more >

Labor Day weekend

Saturday and Sunday were weekend warrior status for me (boo).  I work every 3rd weekend at the hospital which is a nice change from my previous jobs that were every other.  I guess that’s one of the big differences between full time and part time.  But it was still a bummer since the rest of the world had long weekend. Anyway, my holiday pay started at midnight on Sunday (I think?) so even though I didn’t work on Monday I still got a little somethin somethin for ruining my 3 day off getaway potential.  … Read more >

Weekly Recap

This week was fun.  Busy and not busy in perfect amounts.  One thing I’ve noticed about working part time is there’s a big (HUGE) difference between 2 shifts and 3 shifts.  It may not sound like it, but I feel like the time off allows me to get so much more done.  And rather than fill it with errands and chores, I can actually hang out and relax and enjoy myself.  It’s lovely.  Here are some of the things I ate this week. Breakfasts   Baked oatmeal bars with blueberries [sorry about the crappy pic]… Read more >
