That’s how we roll

So…hi again!  I took some time off.  And it was lovely.  Maybe too lovely?  It made me wonder if quitting HHH was an imminent reality… My free time is so precious now.  But I do love having this space to share my latest food and life stuffs…   But I have a job.  And a kid.  And a husband.  And yadda yadda.  I’m triaging my life like a freakin’ ER nurse.  Priority #1 is family.  And as you have now noticed, the blog is definitely on the backburner.  That’s how I roll.  C’est la vie…. Backlogged days

Monday Monday Monday. In nursing, there isn’t really the same stigma for the various days of the week because every day is (potentially) a work day. Fridays don’t mean the next two days are off. Wednesdays aren’t a half way mark. And Mondays aren’t the first day back after a break. So why do Mondays still have that baggage for me? Baked Spaghetti

  Helloooooo lazy.   This is pretty much as good as it gets for a quick week day meal. Allow me to demonstrate.   Collect ingredients.  Layer.  Bake.  So easy.  And definitely delicious.    I made this both gluten free and lactose free so Kyle and I could share it.  It’s much easier that way. Checklist fun

Who doesn’t love a nice organized to-do list? This past week was a little different because Kyle was out of town a few nights working.  But he came home to sleep a little bit in between (night shifts).  And he wanted me to pack all his food so he wouldn’t eat crap on the road.  Hence the need for a very mapped out menu.  I can’t stay organized without it all written out nowadays.  My head is too full of other crap (like the tune to head shoulders knees and toes…make it go away!). A FODMAPs friendly “what I ate” day

Breakfast Udi’s mighty bagel with organic peanut butter and a fried egg.  I had the second half of the bagel a couple hours later.  Also with PB PB. I’m seriously obsessed with these bagels.  They are so hearty and full of seeds and whole grains, you’d never know they are wheat and gluten free.  Definitely the best GF baked good I’ve tried so far.  What sets it apart though, is the fact that it actually tastes like a bagel.  Not eggy bread.  Not nutrient devoid buns.  Not cardboard crap.  Real ingredients!  I can SEE the… Read more >
