Assorted eats

Not a very glamorous title, but it’s all I’ve got.  Explanations following the things that I think need them. Dinner and the next day’s lunch (for Kyle).    Pumpkin sage ravioli bob-bob-bobbing their heads up to say hi.   Minimalist toppings include olive oil, parmesan, & peas.   Vegan carrot cake.  I froze it after our baby shower.  The cake part was good, the frosting wasn’t my fave.  FYI, this cake is made by Fabe’s and sold by Whole Foods.  It’s gluten free and vegan, so the fact that the cake part was good is… Read more >

Pappardelle’s

*Old post alert* I randomly discovered Pappardelle’s pasta when I was strolling the LA Farmer’s Market (the one at the Grove).  I didn’t get anything at the time (I was about to go to a show taping and couldn’t exactly bring groceries with me).  I mostly remember the sweet potato pasta.  I thought it sounded awesome. Then I saw them at Expo West and learned they made gluten free pasta, too! In cool flavors, like Porcini Mushroom, Roasted Red Pepper, & Spinach Large Trumpet. I grabbed two samples of the Della Tella Trumpet Trio, which… Read more >

Healthier Vodka Sauce

I’ve alluded to this sauce combo (I hesitate to claim it as a recipe) before.  It’s the easiest.   It’s basically a lightened up, more nutritious, version of vodka sauce.  It’s not dairy free, because Greek yogurt does have dairy.  But I know that many people who are sensitive to dairy tolerate greek yogurt (me and my sisters are all included in this category).    I use equal parts marinara and Greek yogurt and stir until it’s combined.    Cook the pasta.   And then add the two together for creamy saucy yum.   This… Read more >

Readers request: My Go-To Dinners (Five Fast Meals)

Some of these may seem lame or boring, but when you want a semi-home-made (healthy) meal lickety split, you can’t be too picky.  While I mostly prep for the week in advance, I do leave some days open.  These "wing it" dinners are typically made from either leftovers (revamped to be something else) or various ingredients I know I have ready in the fridge.  As I’ve shared before, I keep certain staples on hand at all times for exactly these scenarios. 1. Stir fry 2. Pasta with veggies 3. Veggie burger 4. Hippie bowl 5…. Read more >

Lunch Lady

Kyle’s coworkers tease him (in a fun, non-mean way) about his healthy vegetarian lunches.  Apparently he’s the organic, non GMO hippie of his office, just like I am in mine. 🙂 Now his colleagues are wondering when I’m going to start packing food for all of them.  Which I’m considering a victory for veggies everywhere.    Thanksgiving leftovers on quinoa.  Oatmeal & snacks.   Spaghetti.  Crock-pot potato chowder (recipe coming).   Pita SB&J with organic Swanson sunbutter and home-made pluot plum jam.   18 Rabbits gracious granola packet with organic vanilla greek yogurt. Scrambled mish… Read more >
