Weekend with Santa

Swim lessons always wear P out so I timed the 50 minute drive to my parents’ house accordingly.  We left straight from the pool in Davis and patty-cakes slept the ENTIRE drive (!!!).  He hates car rides nowadays so this was huge.  I even took advantage of the drive thru Starbucks in Dixon.  🙂 After hanging out with my mom for a bit I made some lunch with leftovers in their fridge. What I Ate Thursday [Thanksgiving]

There was a lot of food in the house on Thursday.  And the Wednesday before.  Actually, the Tuesday before too!  We set off for my parents’ house after I got my hair cut (finally!!!) on Tuesday evening, so by the time we got there P’s bed time had come and gone and he was not thrilled in the least.  Fussy pants was quickly soothed by the heaps of attention he received once more relatives arrived.  Family! A weekend of Lafayette leaves

I’m so behind in posting!!  Indulge me as I recap last weekend… Thursday night we got a surprise visit from Kyle’s dad.  He was passing through Davis so he spent the night at our place. He arrived during patty-cake’s dinner time.  More peas for P, please! After we all played for a while, it was bedtime for the little guy. Roasting in the crock-pot

Usually things end up more steamed than roasted in the crock-pot.  But there’s a way to cheat the system. The trick is using minimal water and letting it cook for a couple of hours with the lid on, then leaving it slightly ajar so the steam can escape and the veggies get nice and “roasted.” Root Veggies with Coconut Oil & Thyme [vegan, gluten free, FODMAPs friendly*] Ingredients: 3-4 cups root vegetables (carrots, potatoes, winter squash, turnips, parsnips, etc.) 2 tbsp coconut oil 1/4 cup water 1/4 tsp dried thyme salt & pepper (to taste)… Read more >

Elise Lately [IV]

Some people may get sick of leftovers, but I am quite content eating the same thing over and over and over again. Leftovers x a million.     Field Roast wild mushroom quarter loaf.  Roasted veggies.  Quinoa.  Like a never ending Thanksgiving…   Blackberries are NOT good in smoothies.    The seeds.  They’re annoying.  But I still have half a bag of frozen berries in the freezer, so…yeah.  It was a “mixed berries” bag, but I picked out all the strawberries, so it’s just blackberries left.  Gotta do something with that.
