The weekly menu

Since a lot of people have been interested in our budget friendly meal planning, here’s what we had this past week.  [Spoiler alert: they’re all really inexpensive dinners] Monday Egg noodles with teriyaki tofu, broccoli, & cashews The organic broccoli was leftover from one of last week’s dinners.  The roasted salted cashews are a pantry staple.  The egg noodles were on sale at WF (we used half of the 1 lb bag/$1.69).  The organic tofu was from WF (I baked the whole block/$1.69). Current events with a day food log

This whole Lance Armstrong business really bums me out.  I always believed his denials.  I guess I just wanted him to be telling the truth about being clean so badly.  I read his books way back when they came out and found his story so inspirational.  I felt so bad for him when his medals were stripped.  And now it turns out he was covering up illegal drug use all along.  Sucks. Budgeting business

We went from your average weekly planners to uber type A budgeters this January.  I actually started a spread sheet on excel to track our monthly grocery expenses so that we could really stick to our financial goals.  Of course the primitive nature of the document was hilarious to Kyle, who could make something a million times more sophisticated in his sleep.  So then I signed us up on mint.com (it’s a site that tracks your credit card statements and payments and all that jazz).  Way easier.  Way more practical. The week’s recap

Since I previously posted this week’s prep and my game plan, I figured I might go into the specifics for a few of the meals that I mentioned.  And show how the rest of the week turned out in terms of the schedule. Jazzing up soup

[Somehow this post got erased but I just recovered it (tech skills?) – so it’s from nearly a month ago] Good on their own, simple soups like the above are also excellent recipe starting points. Remember this cheater soup?  Or this one?  Or this one?  It’s kinda the same process.  Imagine’s soups are great for this blank canvas kind of cooking.  Trader Joe’s makes similar products.  And Amy’s has some good ones too.
