The weekly menu

Since a lot of people have been interested in our budget friendly meal planning, here’s what we had this past week.  [Spoiler alert: they’re all really inexpensive dinners] Monday Egg noodles with teriyaki tofu, broccoli, & cashews The organic broccoli was leftover from one of last week’s dinners.  The roasted salted cashews are a pantry staple.  The egg noodles were on sale at WF (we used half of the 1 lb bag/$1.69).  The organic tofu was from WF (I baked the whole block/$1.69). Progress

Hey look!  An office! Now my crap is actually semi-organized. Kyle was getting really tired of seeing FODMAPs research articles and GI studies piled up all over our old apartment, so he gifted me some file cabinets in the “office” of our new place.  Such a romantic, that one. Tofu technique

I will never make tofu any other way. I promise this technique will make everyone who previously thought they didn’t like tofu change their mind. And yes, there’s a recipe at the end of this post, too. Ready in the flashiest of flashes

The other night I pulled off dinner from start to finish in 10 minutes flat.  Now I’m fairly certain the leftovers on hand were the supporting actors that allowed this to go down, but I also think this meal could be reproduced in an almost similar time frame again (give or take a few seconds depending on my knife skills). Jamie Oliver’s nightmare

As Kyle and I attempt to empty our fridge and freezer before moving, I have discovered both the pros & cons of pre-packaged meals.  Pro:  Mindless, easy prep (box –> plate? even a caveman Kyle can do that) Con: Stipation (where the greens at, yo?)
