This is how my food prepping has been going…

Clearly I have been a busy little bee on my days off.  Busy with LA SOYA that is!  To provide myself with several meal options, I mixed things up in the seasoning department. 

From L to R: plain cubed, plain slabs, Whole Foods’ asian seasonings, and chili powder/paprika).

After some bonding time in the oven, they came out looking like this:

And here’s how I’ve been gittin’ my soy on.

Meal numero uno:

Big salad with mayj crunch, including an entire head of romaine lettuce, red bell pepper, BN squash, carrots, plain baked tofu, and OrganicVille’s Tangy BBQ sauce

This was another completely effortless post-work meal thanks to the food prepping (it is seriously such a life saver)!

In addition to the seasoned tofu, this plate contained quinoa, broccoli/corn/Bragg’s salad, and mashed UNpotatoes.  I forgot how awesome that parsnip, squash & cauli mash is…SOOO tasty!

And since I can’t leave you all on the edge of your seat, here are my delish packed eats for work.

Honey Graham Z bar, Apple Cinnamon Luna Sunrise, roasted red pepper hummus and whole wheat pita.

I’m really starting to like Luna bars (which is weird since I poo-poo-ed them for years before now)…looks like this girl was right all along.  This apple cinn flavor was oaty and breakfasty and reminded me of a more substantial and wholesome version of apple Nutri-grain bars.  Does anyone else remember those bars?

My salad was pretty tradish, loaded with every single veggie my fridge had to offer – including spinach, steamed kale, steamed broccoli, steamed asparagus, steamed carrots, corn, mushrooms, and dried cranz.

And last, but not least, I HAD to show you the dualing colors of my pinata apple.

Isn’t it SO weird how a mere 180 degrees and a fruit looks completely different?  No?  Just me?  Ah well…

    i love love love your ginormous salads 🙂 i’ll admit to veggie-envy right now. do you usually eat them plain or with dressing/lemon juice/braggs/etc? i’m also loving the mashed un-potatoes idea. i hate mashed potatoes (i know, i know, i’m weird) but adore squash and cauli, so i’ll have to give this a try. any parsnip tips? i’ve been wanting to try them but just don’t know how…

    Loving the piniata apple…is that actually what they’re called? I’ve never heard of them, and I like to think of myself as an apple conoisseur, so I better get crackin! MMM tofu…why does it get such a bad rep?

    I love baked tofu, especially when it’s been in the fridge for while. It gets nice and chewy that way and is perfect for salads. Yum!

    I got that BBQ sauce recently and I love, love, love the fact that it is made with agave vs. sugar or worse, HFCS. If only they made bigger bottles though – I’ve had to force myself to use small portions so it lasts awhile, otherwise I would go through a bottle every other day!

    They should just drop the weird Pinata name and call them Lady Galas… I guess that would make you the papa-paparazzi then right? Wow i’m tired, don’t mind the jokes. So tired in fact that while staring at your classy salad in your first lunch picture i spotted the word “poo” with what looks like half of a shroom as the “p” and your apples would be the “o o”. Okay i’m officially too far gone to be leaving comments right now. Were your lab days in undergrad as long as mine seem? By the way, nutri-grain bars used to be a staple in la maison many moons ago, i miss them but supplement them with Gnu Foods Bars now. Have you tried?

    OMG, Elise…I have tofu baking RIGHT now as I type this for my salads, AND 1/2 of it is marinated in that EXACT same OrganicVille’s Tangy BBQ sauce! That is just weird 🙂 We really need to have a meal together, lol!

    And yes, I find it weird that apples can vary so much in color on the same apple too. Oh, to add to the weirdness, I bought Pinata apples over the weekend before reading your blog too…they are on sale at a store near me. Strange! And delicious 🙂

    Question, do you also cook your quinoa in bulk ahead of time? I’m sure you do, but I wanted to know how far ahead of time you cook it and how long does it keep? I only know how long white rice lasts…it’s the Asian…hehe

    oh and p.s. I made couscous the other night as a rice substitue and it’s so easy! I love my new rice substitute!!

Also I’m a tad alarmed at the small amount of hummus u packed for lunch…I’m sure you’ll get back on track ;D love u E baby!

    they are actually called pinata apples. i had never seen that variety before and now im obsessed – they taste like a cross btwn pink ladies and galas. so good! i have no clue why people are so anti-soy. i mean, lets be real, its freakin’ tofu!!! im all about everything in moderation, but tofu shouldnt be grouped in the same dangerous category as, say, bacon. as a cardiac nurse, its a very clear difference. one will lead you to the operating room and then ill be your nurse, and one will have you living a long and prosperous life. no brainer!!

    oh and i forgot to say…i tried the raisin cinn flavored gnu but wasnt in love with it…the stats were good but if i recall, i think i wanted a bit more sweetness? thats the only flavor i tried though…the rest have nuts in the title i think (nuts are a turn off – insert obvious joke here).

    i do cook my quinoa in bulk in advance. not only bc its super easy, but i also like my quinoa cold…

    couscous is SOOO easy, right? i love it and you can get it from the WFs bulk bins for super cheap – have you tried the whole wheat couscous?

    they are!! haha. i swear though, they did something to the regular luna bar recipes because all of a sudden i really like them!! or maybe my taste buds are becoming more ladylike, haha.
    i had similar issues with the hummus. once i got to work and was eating it i was grossly disappointed with how little i had to work with. tragic. i made up for it at dinner, obvs 🙂
