Lasagna repeat after a snow day

Remember this butternut squash “cheese” lasagna that I shared last year?

HIGHLY recommend that you add it to the menu asap.

I was craving it so I remade the recipe and it was just as stellar as it was back when I first created it.

I meannnn…that cashew cheese!! It is creamy dreamy bliss!

I soaked the cashews for a few hours in boiling water then drained them before adding the rest of the ingreds and it blended into the smoothest sauce thanks to the vitamix.

It looks like I over sauced it, but I assure you it was juuuuuust fine like that.

Baked up so nicely.

I served it with cauliflower that was weirdly colored (I’m guessing that’s why it was in my imperfect delivery).

We had enough for two meals, which was perfect because I took the kids for a quick trip to Tahoe and by the time we got home I was too tired to cook. So glad to have leftovers ready to go!

Kyle was out of town, so I had (what would have been) his portion for my lunch the next day. 🙂

We only missed one day of distance learning “school”, all of which we have basically made up by now, and yet I’m still dealing with guilt inducing calls from the district about it (because I didn’t fake that they were sick on the attendance line and was brutally honest when I told them we needed a day off because we were struggling).

Who knew I’d still fail at playing hooky even as an adult.

    Thanks for reminding me to give this recipe a try! I saw it on your blog a few months ago but it got forgotten about in my screenshots. Also, I agree about the no-boil pasta. I’d rather spend 3x as much if I don’t have to do any prep work.

    Don’t let the guilt calls make you feel bad.. A mental health day is just as valid as a sick day in my opinion!
