More cups

Kyle got jealous with all my chocolate peanut butter cup eating.  So I made him something to shut him up delight his taste buds, too.

I made four, thinking they’d last him through the week.  I don’t know what I was thinking.

Nutty Fudge Cups (vegan, gluten free)

[yields 4 cups]

Ingredients:

  • 3/4 cup vegan chocolate chips, melted
  • 2 tbsp peanut butter
  • 2 tbsp Earth Balance, melted
  • 2 tbsp powdered sugar (I used NuNaturals stevia baking blend)
  • 1/4 cup walnuts, crushed

Directions:

Melt chocolate chips.  Melt butter.  Combine with the rest of the ingredients.  Pour into cupcake wrappers.  Put in freezer until they have cooled and set.

If by some miracle, you have more left over, store them in the fridge.  Or send ‘em to my husband.

    Homemade peanut butter cups are always amazing. I wish I had the patience to make them more often. Usually i just stick chocolate into the peanut butter jar.
