My Mexican Masterpiece

This is what suenos are made of.

My Mexican cravings have hit an all time high…so I tried to channel Chef Tanya to achieve nacho perfection on my own.

Thanks to Expo West I still had sample packs of Beanfield’s bean & rice chips.  The pico de gallo flavor just screamed make-me-into-nachos-right-now.

They won VegNews’ Best of Show 2012 award and now I know why.  They had crazy flavor!  To be honest, they didn’t even need any toppings, they actually did taste like beans and pico de gallo.

I also recently got samples from The Better Chip in the mail.  I tried the fresh corn and sea salt on it’s own (clean & tasty), but used the red pepper and salsa fresca in my nachos.  Wow.  Another winner of a chip!

Both are gluten free and made with totally pure ingredients.  The Beanfield’s chips are rice based (and corn free), while The Better Chips are mostly corn (and 40% veggies).  Both are GMO free, preservative free, and cholesterol free.  If you can find either of these chips at your local health foods store, DO IT!

The cheese is teese’s nacho vegan sauce.  I microwaved it for a minute and it went from a thick blob to melted cheesy goodness.  It was pretty dang close to the real deal and it had some serious kick too! 

The final touches were fresh tomato, avocado, and plain greek yogurt (acting as sour cream).

    oh wow! check out the realistic melting action on that cheese! that actually looks super authentic for a dairy cheese substitute. most of the shreds find- you can definitely tell.

    So I was just at Sprouts on my way to the check stand and what do I see on the end cap … Beanfields Pico De Gallo chips. I instantly think of your nachos and throw a back in my cart.
    When I arrived home, My husband tells me that he made tostadas for himself -Sorry honey. Well he ended up leaving the refried beans on the stove and I thought…chips and bean dip- brilliant idea!
    I added some chopped onion, tomato and Jalepeno. It was delicious.
    These are the best healthy/good for chips that I have ever tasted.
    Thanks to you, my tummy is super happy.
