Nasoya Toss’able Tofu with a butternut and kale salad

Nasoya just came out with a new tofu product that I think could make packing lunches (or eating them at home – whatever) SO MUCH EASIER.

Toss’ables are pre-marinated cubed tofu chunks that are ready to go for whatever meal you want to add them into!  The balsamic vinaigrette especially caught my eye because my favorite vegan Winter salad called for balsamic dressing so the tofu would go PERFECTLY with the salad, not to mention it would add 14 grams of plant-based protein (per 3 oz. serving). Score!

Both flavors of toss’ables are gluten free and organic.

I was sent this adorable salad kit to come up with a recipe and it didn’t take me long to settle on a version of my beloved vegan Winter salad.

How cute is that little fork rest in the lid!?  I love that it’s big enough for an Elise sized salad!

And then there’s another layer for toppings and dressing that rests above so your nuts and seeds will still be crispy and crunchy when you are ready to eat!

Reminder: here’s how I make candied walnuts.

First layer: kale
Second layer: spiralized and lightly steamed butternut squash (so it’s still a touch al dente)
On the side: half an avocado

Toppings: Nasoya balsamic tofu toss’able* + candied walnuts + dried cranberries
Dressing: home-made balsamic vinaigrette

*If you can’t find Nasoya balsamic toss’able tofu near you, you can pre-marinate tofu in the same dressing I linked to OR swap in feta cheese.  Both off that tangy flavor that will balance the salad and make it pop.
