2017/2018

Last meal of 2017! Kyle grilled flank steak that I had marinated like this. And I made crab cakes. I had looked up recipes beforehand but didn’t follow any exactly because I only wanted to make enough for our foursome.  I didn’t actually think the kids would like them (I was wrong). I used half the can of crab meat and saved the rest for poke bowls (on the dinner menu later in the week), combined with an egg, green onions, old bay seasoning, salt, and GF panko. These are good to have on hand… Read more >

Day 4: SD strides

Guess what I did! Stroller Strides in SD!  The idea occurred to me before we left so I emailed the Carlsbad fit4mom team and asked how it might work if I wanted to do some classes while on vacay.  They were SO awesome and emailed back saying I got two free classes at a visiting location and after that it would be $10 per class.  SWEET!  The first class offered was on the 26th and I was super excited. Even though it meant waiting forever to eat breakfast (I can’t eat before working out).  I… Read more >

Day 3: this Christmas

WEEEEE!!!!  I can say without a doubt, Christmas morning as a parent is better than Christmas morning as a kid.  I went to bed SO EXCITED for them to wake up and see the cookies all gone and open their stockings. Day 2: the eve

Twas the day before Christmas and we were happy as could be in our sunshine-y bubble of a vacation. I did a spin class at the hotel gym, which was as mediocre as could be.  I’m not a proficient spin person but even I could have taught a better class.  The energy was non existent, which is kinda an integral part.  Oh well.  I still pushed myself as best I could and got a good sweat. We ate breakfast at a place called Healthy Creations that was gluten free, with an emphasis on organic, vegan… Read more >

Prep goals

After a long day in the car, we were all so happy to finally pull into our garage. But oh boy, did we have a ton of stuff to unpack and put away! And I had to come up with something to eat.  V was sick and wanted to go right to bed after her bath, so I didn’t bother making food until she was down.  Poor thing had a GI situation the whole ride home and didn’t eat anything from 9 am on.  When V refuses food, you KNOW she isn’t feeling well. I… Read more >
