Cool or warm, this is an easy tasty dish. Easy being the key thing if you’d rather be soaking up the summer rays than doing things in the kitchen. Who wouldn’t? Another fun one. Saturdays and Sundays are my faves because I get to spend them with both my boys. Friday evening Kyle BBQ-ed some shrimp and corn and I made a salad. I marinated 2 pounds of shrimp in Garlic Gold red wine vinaigrette. It contains garlic infused olive oil and red wine and Italian seasonings. No garlic, so it’s totally FODMAPs friendly. We’ve hit a road block hiccup (fingers crossed?) in the sleeping schedule and I’m too tired to post much. My little man rung in his 4th month with some crankiness and of course it aligns with me going back to work so I have huge amounts of mommy guilt going on…in addition to the normal desperation of trying to figure out what’s wronggggggg? No-Bake Coconut Balls [vegan, gluten free, FODMAPs friendly] Ingredients: 2 cup shredded unsweetened coconut 8 dates, pitted 3 tbsp brown rice syrup 1 tbsp water 1/8 tsp salt Directions: Pulse coconut and dates in a food processor. Add in syrup and salt and continue to pulse. Add water if needed (it will depend on the freshness of your dates). I needed 1 tbsp water for the dough to stick. Roll into balls. Helloooooo lazy. This is pretty much as good as it gets for a quick week day meal. Allow me to demonstrate. Collect ingredients. Layer. Bake. So easy. And definitely delicious. I made this both gluten free and lactose free so Kyle and I could share it. It’s much easier that way. Isn’t it cool how the spaghetti is baked into the casserole? And the noodles are all plump.
