Trying Thai cooking

  I made this on our last night in Nor Cal and just wanted to quickly share the recipe I used. Easter happenings

I almost titled this post Easter “hop”penings.  Too cheesy?  I agree.  Every once in a while I’m able to deny the puns (sorry dad). The night before Easter Sunday we had some family visitors come over to see P…and bring us dinner! The drive home and the day on campus

I made a major mistake and didn’t say decaf when I ordered this (venti soy misto) before we hit the road to come home from NorCal. I was very perky!  I hope P didn’t get as high as I did off the caffeine!  Oops!! Two ingredient sweet potato “pancakes”

I’ll admit, I was the first one to raise an eyebrow during the whole 2 ingredient banana pancake phase a few months ago.  But as it turns out, they were kinda good. These are better in my opinion. Sweet potatoes > Bananas At least in terms of making pancakes. Touring Davis
