Birth Story [part I – labor]

I thought I would need to write this up immediately so I didn’t forget anything.  Turns out, this is one experience that I will never ever forget.  Even the itty bitty details are etched in my brain. What to do with broccoli stalks

Old post alert! This was written a few weeks ago, but somehow got lost & forgotten in the wordpress queue. Still figured I’d share… Scraps! Red lentils, broccoli stalk, carrots, celery, butternut squash soup (and unpictured TVP). Doesn’t look like much huh. Unless you have a crock pot and a bunch of spices. Oh really swan!?!?? Hospital, take-out, & home-made (food from the first two weeks post-partum)

The first couple of weeks have flown by.  It’s what everyone said would happen, and it is definitely the truth. Roasting in the crock-pot

Usually things end up more steamed than roasted in the crock-pot.  But there’s a way to cheat the system. The trick is using minimal water and letting it cook for a couple of hours with the lid on, then leaving it slightly ajar so the steam can escape and the veggies get nice and “roasted.” Root Veggies with Coconut Oil & Thyme [vegan, gluten free, FODMAPs friendly*] Ingredients: 3-4 cups root vegetables (carrots, potatoes, winter squash, turnips, parsnips, etc.) 2 tbsp coconut oil 1/4 cup water 1/4 tsp dried thyme salt & pepper (to taste)… Read more >
