Daily eats

My breakfast was home-made bread (hence the poor slicing) with almond butter.  I used up almost the very last bit of it, so I decided to make another batch of nut butter.    This time with peanuts.  Roasted peanuts to be exact. Deep down I think Kyle prefers peanut butter to almond butter.  And we recently bought celery and Ritz crackers, which are two of his favorite things to pile with PB.    Honey roasted peanut butter.  Kissed with a touch of agave. I had to do some taste testing of the peanut butter,… Read more >

Get Your Good Going [giveaway]

There are certain morning rituals I have.  I set my clothes out the night before – the same way each time.  I also pack my lunch box the night before.  Every single day I work. I park in the same spot.  I wait in the car until the same time.  And I sign up for the same break…. Read more >

Nutty pasta

Pasta!! I made this over a week ago, but the recipe is still worth sharing. Although “recipe” may not be the right word, since it’s a pretty loose formula. Roasted nuts – brazil, pecans, cashews, almonds Basil Parsley Garlic infused olive oil Plain almond milk Nutritional yeast Sorry for the lack of measurements, but I was kinda playing mad chemist, throwing things in until I got the right amount. Unlike my previous pesto, this was a really thick one…. Read more >

Lake Almanor Weekend

This weekend Kyle and I flew/drove to Lake Almanor for a couples getaway.  Our friends have a baby on the way, so we were celebrating that – but instead of a girly shower with cheesy games we relaxed, drank and enjoyed our peaceful vacation with friends.    The hosts own an amazing cabin that I couldn’t even being to describe.  Not only does it have tons of bedrooms, a TV den and game room, a huge living room with an equally huge outside deck, a bocce ball court, horseshoe and corn hole set ups, and… Read more >

Crock-pot vegetarian chili

Long overdue recipe coming ‘atcha.  Finally. This one couldn’t be easier guys.  No measurements required.  And it’ll be delicious.  Promise.  Here’s what I did.     1. Cover ~1/4 – 1/3 cup dry beans (I used black and adzuki) with water (about an inch high) for 5 hours on low heat. 2. Add two 15 oz. cans of beans (I used kidney and cannellini), plus 1 14.5 oz. can diced tomatoes, and 1 6 oz. can tomato paste.  3. Add 1/2 onion, finely diced and 3-4 baby bell peppers, finely diced. 4. Add 1/4… Read more >
