While you were sleeping

I was working.  And eating.  Here’s three shifts-worth of food.   Tuesday night: spinach, carrots, quinoa and eggs (topped in Bragg’s and nooch) baby carrots tamari roasted almonds Udi’s bread with Artisana cashew-tahini butter Kettle Pop organic kettle corn Not much to say here.  It tasted like kettle corn.  Duh.   Wednesday night: brown rice, spinach, and Sunshine veggie burger (original) baby carrots Inka Chips sweet plantain chips So good!  Even though the whole bag is considered 3 servings (which I obviously ignored and treated as a single serving), the nutritional info is still not bad…. Savory madness

If there are typos in this post it’s because I’m running on 1/8th a tank.  I just worked three night shifts in a row (not pretty) and now I’m attempting to write and bake a new gluten free bread following no recipe.  We will see how this post turns out soon enough, but I’ll have to wait ‘til tomorrow to see how the bread tastes. A veggie’s best friend

At the end of the day I want simple but delicious.  Fresh fare is my preference, but sometimes it’s not in the cards.  Enter: the freezer. There are a lot of negative associations with frozen food, but done right they can be your best friend. Leftovers – any time you make a lasagnas or casseroles, make WAY more than you will eat and portion the extras into tupperware.  By freezing 2/3 of the dish from the get-go you preserve the freshness of the dish and guarantee yourself a future home cooked meal. Missing motivation

I seem to be unable to motivate myself to run.  I think I have the reverse problem from the rest of society…as soon as I sign up for a race I lose all inspiration to train.  I’m OCD enough to eke out some willpower, but forced running is not fun running.  I know myself, so I know the difference between being bored with my running route and being bored with running in any form.  Boredom is not my problem.  Motivation is.  I’m missing my running mojo.
