Mexican Quinoa Corn Salad

I made a recipe up and wrote it down, so that’s something new. We all loved it, too, and now I’ll share it with you. I used lactose free plain yogurt instead of sour cream, but if you want, you could sub a non dairy yogurt or greek yogurt or sour cream. Whatever you’re feeling in the dairy department! Rationing but relishing

We still haven’t been to the store and Kyle and V comment on a daily basis that I’m somehow making the absolute 100% most awesome meals (to quote them). So that’s a nice little thing to hear considering my limitations. This should be a Top Chef challenge. And speaking of challenges…I am still riding the endorphins of “rise to the challenge” mode with regard to parenting and home-schooling and keeping the kids happy and occupied and engaged with enough structure that they feel safe but not too much that our house turns into a classroom…. A bowl with three B’s

Now, more than ever, my basic hippie bowl formula is the way to make your life easier as you contemplate what to make with your dwindling grocery reserves. Green + grain + protein I typically opt for some kind of lettuce for the green category: kale, cabbage, spinach, whatever. But you could choose whatever you want. Peas, collards, asparagus…go crazy! Green enchilada rice casserole

Hey look, it’s another freezer and pantry meal! I made a ton of enchilada sauce (A TON) last summer because our CSA was shoving peppers of every shape and kind down our throats and all I could do to keep up was make sauces to jar up and save. Veggie quiche with chard & chevre

We have now reached the point in which a regular pie pan doesn’t feed our whole family, so I am essentially making deep dish quiches.
