Kale and wheat berry salad

It’s time for a summer version of the DIY grain bowl! I posted my spring adaptation here. That version had brown rice, which is a great GF option, but lately I’ve been in the mood for wheat berries instead. And as long as I have access to these freshly shucked grains, I am keeping this salad on repeat. Chevre, fig and bacon quiche

If you happen to have fresh figs where you are, I highly recommend this recipe. I based it off of the fig n pig quiche from the Run Fast. Eat Slow. cookbook, which I don’t actually own, but rented from the library. Sur la table cooking class date

We have been gone for a little over a week…first in Sun River with friends…and now up in Idaho with Kyle’s parents. Having no agenda makes life very relaxing. We even got a date night! Summer quinoa crunch bowl

This salad has more prep than salads I usually post about, but everything can be done in advance (way way in advance if you’re on top of it with your Sunday prep game) which means that when it’s time to eat, dinner is little more than assembling.
