Here’s a quick and easy option for week nights. The kids love this and it couldn’t be faster to make! Do you have some kind of lettuce? Frozen edamame? Then you’re set. Thai meatball salad

Thai meatballs! These have very few ingredients but heavenly flavors. You can serve them as a rice bowl w broccoli. Or on the side of a stir fry. Or like I did, on top of a salad. Spring Grain Bowl

I keep making different iterations of this same salad because it is SO GOOD. What really makes it is the dressing. It’s crazy how so few ingredients can transform into a something so stellar.
