Calcium in food

I know a lot about nutrition, but I’m not a nutritionist. I also know a lot about health and wellness, but I’m not a doctor. But you know what I am? A responsible mom who believes in real food. Oh, and a nurse. And yet somehow I forgot all of that at Valley’s four year old well child visit last month. What’s with the self doubt?? I think it mainly has to do with the fact that people (myself included) see MDs as figures of authority. That’s an appropriate view most of the time, but… Read more >

Spring salad with quinoa and strawberries

If it’s Spring where you are, then (a) lucky you and (b) I have something for you to make! I keep thinking we are finally finallllly out of Winter here, but we keep having these cold/rainy storms pass through. It’s a bummer, but I’m definitely living it up when the sun does come out long enough to allow for some outside time. It’s funny how 60 degrees at the end of Winter is so different than 60 degrees at the end of Fall. My perspective is so warped after sucking it up through bike rides… Read more >

Brussels by the junior hippies

Kyle was out of town last week and I asked the kids what they wanted for dinner… Brussels sprouts!! And bacon! Done and done. Whether or not they are conscious of it, they generally include a vegetable and carb in most things they come up with…as well as an animal protein of some kind (usually salmon,… Read more >

When life gives you cabbage

Having a weekly CSA has been such a fun treat this Winter even if it means the collection of certain produce has gotten out of hand. I have FOUR spaghetti squash on the counter right now (some are so big that just one provides enough for 4-6 meals!). The other item we have in excess is cabbage. I’ve hemmed and hawed about making kimchi or sauerkraut, but I already have both in the fridge currently so it seems unnecessary. Luckily it stays fresh for a while when stored in the crisper drawer. The kids actually… Read more >

The easiest Thai curry

I posted this photo on IG the other day and got SO MANY requests for the recipe. You guys, it is BARELY a recipe. Like everything I make, it’s highly adaptable, so I’ll share the basics and you can either fill in the rest on your own or follow what I did exactly. Either way, it’ll end up delish, I’m sure! This is the main ingredient that you need. I try to have frozen shrimp and/or this seafood blend in the freezer for dinner emergencies like this because I know I can whip something with… Read more >
