My favorite lentil salad

This is one of my very favorite salads and I know I often show photos of it on the blog, but somehow I’ve never shared the recipe. It’s from ATK’s The Complete Vegetarian cookbook, which is always my go-to when I’m feeling uninspired and craving plant based meals. They have a few different lentil dishes, but this variation with hazelnuts and chevre is my number one. I often serve it with a few other veggies sides – roasted sweet potatoes and Brussels sprouts seem to be my most frequent Winter pairing and then in Summer… Read more >

Swirly sweet bread for breakfast

Kyle took the kids to farmer’s market one time in December and I asked him to pick up a loaf of bread from the Upper Crust but then he got distracted and eyed a loaf of chocolate babka and has been dropping hints for me to make one ever since. Message. Received. I started with a sweet dough that I made up after reading a few different recipes. And then I added cookie butter and chocolate before rolling it up and baking it. The whole slicing and braiding thing was an exercise in talking my… Read more >

Family weekending

We finished off our 3rd/4th (?) loaf of persimmon walnut bread over the weekend and Kyle just asked if we had any more this Wednesday. Looks like I have some baking to do! I have four more persimmons left and thanks to Mr. P’s math skills, he informed me that meant “we” could actually make TWO more loaves. Isn’t math great! šŸ˜› Thai salad love right here! And since the avo was the size of my head, I kept my serving size to 1/3 of it rather than the usual 1/2. But I’m going to… Read more >

My first shepherd’s pie

This is the first shepherd’s pie I’ve ever made or eaten and I didn’t follow a recipe so I’m not sure how it compares to the traditional version. That said, it was awesome and the whole family was raving about it, so authentic or not, it was a winner. I got the idea to make it when I was brainstorming what to do with the leftover mashed potatoes from Christmas. I was thinking of using them in a soup as a kind of thickener to make it hearty and creamy, but then I got the… Read more >

Food with notes

I made a massive batch of this vegan white bean korma for my sissie and then made another batch right after for us. The kids loooooved it and it made enough for them to have the leftovers the next day for lunch. I couldn’t find candied nuts so I made some. We are RACING through the second loaf of persimmon walnut bread. Before leaving my home town after the holidays I swung by WF to get a massive tub of my faaaavorite rice and kale salad. It lasted two and a half glorious meals. Imperfect… Read more >
