A three-fer

Not meatballs. I should have made a bigger batch of these coconut macaroon things because Kyle ate half of them before I even tried one.   Work food.  Banana.  Carrots.  Macaroons. It would probably blow your mind to know how many carrots we go through in our little hippie household.  I eat half a pound a day, minimum.  If our fridge were bigger it would be packed with orange.  As it is, we have one crisper drawer solely devoted to those two pound bags (plural). Almond milk is another thing we seem to restock at… Read more >

Banana bread bookends

First thing I did when I got up was inhale deeply. Even though our bedroom is upstairs, the aromas from the kitchen still make their way up to us overnight.  Especially when I make bread right before bedtime. I took a few slices of each for breakfast (and general morning snacking). Excellent. I don’t have photos of all my work food.  I brought pizza and other stuff. The dough was soooo good.  Fluffy and soft. The sauce had too much garlic.  FODMAPs fail. The cheese was melty.  Really and truly.  It melted. If you see… Read more >

Multi-tasking like whoa

When are you most productive in the day?  Are you a morning person?  I’m not.  I don’t feel like cooking or baking in the morning (which is why I pack my work food the night before).  I generally hit my stride in the early afternoon, but every once in a while I’ll have a late night frenzy in the kitch. Last night was one of those nights.  We were out of bread.  We had black bananas.  We had raw home-made yeast dough that needed to meet it’s fate.  And I was feeling chef-tastic.  Count it… Read more >

Working then eating

Work food.     I didn’t take photos of my breakfast oats because they’re monotonous and (quite frankly) snooze-inducing at this point. Can I get a virtual high five for weaning myself down to ZERO pieces of gum?!  Heyooo!  More on that on my FODMAPs site. Post-work food. Herbed bread twists made from scratch [vegan].  They are like little pillows of carbohydrate heaven. Brown rice & veggie quiche [vegetarian, gluten free].  A twist on this recipe. Mac ‘n Cheese [vegan].  I added in spinach because green-less meals make me sad. Do you plan dinner before… Read more >

Easter weekend

I survived!  This past weekend was my first string of shifts back at the hospital after two weeks on my death bed.  I’m still on antibiotics and my ear and head are still congested (and requiring their own med cocktail), but my cough is loose and minimal and I can breath, stand upright and walk.  I’m like a human again!  Hooray.  Still no exercise though.  Which meant Kyle ran the Hollywood Half by himself.   Since I was at work, Ethel and her sister took over official cheerleading duties.  How cute is their poster?!? So… Read more >
