Beach priorities

 

Last Friday I skipped my planned run to go to the beach.  It wasn’t really set in stone anyway…when I say “planned run”, what I mean is, “exercise session I got dressed for but then immediately changed out of.” 

I’m not one of those people who pre-sets the week’s fitness plan each Sunday night. 

Yes, I usually do something each day of the week, but I pretty much figure it out that day, depending how I feel in the moment. 

I work 3 days a week, so on those days I stick to AM yoga or a strength training/cardio DVD (ie Jillian) before I head to the hospital.  Some mornings it doesn’t happen though.  Sleep is good, too.  😉

On the other 4 days, I alternate long & short runs with long & short bicycle rides. 

I like being active, so I definitely don’t see activity as a chore.  Rather, I see it as “me time,” making it more of a therapy session than a way to stay in shape. 

In spite of everything I just said, I decided to seize the day on Friday and head to the beach instead of lacing up my running shoes.  When it’s 80+ degrees in October, you pretty much HAVE TO take advantage of the beautiful sunny weather.  Our apartment was also uncomfortably hot.

I had to slice the bread because last loaf I made almost cost him his thumb.  This is the price you pay when you have a klutzy husband make your own bread.

After we had some nice beach time, we grocery shopped it up, Whole Foods style. 

I made dinner for us both while Kyle did business crap.

I remade this Caprese Caesar Pasta salad dish but with different kind of noodles.

Kyle and I are equally obsessed with this meal.  We fought over seconds and thirds.

Good thing I made a monstrous portion. 

After I was satisfied and then some, I packed lunch for Saturday and enjoyed a salty dessert bowl.

Since I already posted on Saturday’s food stuffs, I’ll skip right ahead to Sunday.   Sorry for the disorder.  I’m a loco.

So good.  I think I need to start spicing up my ‘fu recipes because the red pepper makes it go bam!  <— Emeril reference.

The rest of my goodies included Flamous falafel chips, corn nuts, Ghirardelli’s sea salt soiree dark chocolate, and Perfect Foods peanut butter bar.

I had a repeat breakfast like Saturday’s – mixing plain cooked quinoa with Sweet Almond & Quinoa Granola.

Why is this so good!?!  It’s so simple, but for some reason blows my mind. 

Truthfully, lunch was the best thing though.  I love when I have really awesome leftovers because they really do make packing lunches easy.

I had the EASIEST shift on Sunday.  I almost felt guilty it was so mellow.  The unit was at a stand still.  There were more open beds than occupied ones.  I still had 3 patients, but it just felt like a fake work day because of how deserted the place was.  Bizarre.  That’s how weekends go though…when they are good, they’re very very good, but when they are bad, they’re HORRID.

Whoa protein.  Both seitan AND tofu in one meal.  To the skeptics who say you can’t get enough protein on a plant based diet…eat your [cholesterol free] heart out.

Leftover kale salad.  Still not my fave, but I can’t waste food, so I just doused it in Bragg’s liquid aminos.  And avocado.  That always does the trick.

I finished the box of Pamela’s chocolate chip cookies in two servings.  I’m not saying how many are in a box. 

Ok, rank your non-work priorities: sleep, exercise, QT with my friends, other (fill in the blank)…ready, set, go!

Mine: beach, beach, beach, beach, sleep, beach.

    I love how colorful your meals look, and really tasty indeed! Other think I find really nice is your approach to fitness. I also like to think about it as of a “me-time” and not something I have to do.

    Sleep, then exercise for sure! But I could definitely squeeze beach in between those 🙂 Gotta take advantage of summer while it lasts!

Hmmm…I can’t prioritise that all, my mind is muddled, I’m sleepy 😛 But the things that are important to me are hanging with my boyfriend <3 yoga (I do this at home), eating healthy food in large quatities, writing, sleeping, playing, loved ones! 🙂 In no particular order. Love your work eats, as per usual. I would totally be hanging at the beach if I had one near me – sadly they're a rare occurance in England, especially in October, lol! 😉 Enjoy! <3 xyx

    Elise, you push me to pack my own healthy lunch- last night I was contemplating on buying lunch at the hospital but I thought of you and how I don’t even have full 12 hr shifts and I’m taking the easy way out (!!). So I cooked up some quinoa, paired it with some really good homemade tomato sauce I made over the weekend (good planning there-I’m so happy I made it ahead!), sprinkled nooch on top and called it a day. And it turned out to be one of the best meals I’ve had recently!

    I can’t emphasize enough how your blog positively impacts the food choices I make. 🙂 Yours is the only one I read out of all the ‘healthy living’ blogs consistently.

    I really gotta make your quinoa granola!

    ‘I made dinner for us both while Kyle did business crap.’ hehe this cracked me up! hmmm I don’t “work” but I don’t really get time off from being a Mum – when Misty has a nap I get in a bit of yoga, cook, or do some reading. Otherwise me and the boy go on adventures (usually the beach, as we live a 5 minute stroll away, so good!) Is Kyle still eating mainly meat-free?
