Chemistry and cornbread

I got a few questions following this post, when I mentioned that I was starting the fructans challenge phase. Coffee ‘n cakes

Remember back when I thought my body was through with coffee?  Ha!  What a joke.  Obviously I was in a weird place… I’m still attempting to keep my daily dose to one cup(ish).  Some days it’s no problem, but other days (ie work days), I get major hankerings for an afternoon pick-me-up in the form of caffeine.  I got this in the mail last week (a perk of being in the Foodbuzz Tastemaker program). If you’re wondering why there have been more giveaway posts and Spain recaps than daily eats lately, it’s because I’ve been doing the fructans challenge phase.  And I’m not thrilled with it.  At first I was nervous about reintroducing fructans, then I was excited, then I went overboard… I actually started last week, but had such horrible symptoms, I went back to the elimination diet for two days in between, just to allow my body to rest and re-set. The Westin’s Worst

May 14th started with an 0730 rise and shine to re-pack and set out.  My dad and I attempted to locate a “supermercado” while the rest of the fam ate at the local croissanteria (pretty sure my dad made up that name).  No luck. Hi Pie
