Coffee ‘n cakes

Remember back when I thought my body was through with coffee?  Ha!  What a joke.  Obviously I was in a weird place…

I’m still attempting to keep my daily dose to one cup(ish).  Some days it’s no problem, but other days (ie work days), I get major hankerings for an afternoon pick-me-up in the form of caffeine.

I got this in the mail last week (a perk of being in the Foodbuzz Tastemaker program).

Two of their medium roasts will now be available at local grocery stores…and I get to try them!

I made sure to rub it in my parents’ face (they were super jealous because they only drink Peet’s coffee – specifically the Major Dickason’s Blend).  But I’m not a totally horrible daughter.  I promised I’d give them some coupons for the Cafe Solano and Cafe Domingo blends.

Foam-face.  I added almond milk (that I frothed up) to make a really gourmet cup. 

  1. Peet’s coffee is strong!
  2. Cafe Solano is yum.
  3. Pancakes with coffee is the breakfast of champions.

Wholesome Chow makes lots of vegan/gluten-free baking mixes.  You may remember the yellow cupcakes I made using one of their mixes last month.

Thanks to the simple step-by-step instructions, I had hot, fluffy, delicious pancakes in no time at all.  And like the rest of their products, these were vegan, organic, fair trade, casein, peanut, wheat & gluten free.  Hell yes!

For the lazy girl who decides she wants pancakes at the last minute, this is pretty ideal.

This was my first batch.  I added peanut butter thinned with maple syrup on top, which was probably one of the best pancake toppings ever devised.  Perfection!
