Quinoa Quiche

Not much to say here people.  I think the photo speaks for itself. “Cheesy” Veggie Quinoa Quiche Dairy-free, gluten-free, vegetarian, low FODMAPS Yield: two 6 inch ramekin quiches Ingredients: 1 cup (pre) cooked quinoa 1/4 cup butternut squash puree 1 tomato, diced 1 large chard leaf, chiffonaded 2 eggs 2 tbsp nutritional yeast 1/2 tsp garlic salt (more/less to taste) Prep and combine veggies (chard, tomato, squash), then add nooch & garlic salt and mix. Spicy fu

New tofu recipe!   Blackened Tofu Slabs from Bryant Terry’s Vegan Soul Kitchen.   I’ll admit I was scared by the heat, but I just went with it…   Such a success.  I’m really glad my obsession with cookbooks is good for something.  For anyone interested in buying my presents, it’s always good to go with cookbooks.  😉 The rest of dinner was as simple as it gets. Chard!   I sautéed it in olive oil and nada mas. For the record, organic produce does have it’s flaws.  You gotta scrub the bejeezus out of… Read more >

WTF ingredients: nooch

Recently, I’ve gotten a few questions in the comments section about nutritional yeast.    What is it? Nutritional yeast is a deactivated yeast (meaning it has no fermenting ability) and it is produced by culturing pure strains of yeast (a fungi) with a mixture of sugarcane and beet molasses.  Sounds appetizing, huh? Chocolate is my friend

I think your taste buds must change over time because four years ago I thought nuts were disgusting and really wasn’t a fan of dark chocolate.  At all. I am still iffy on super dark chocolate (nothing over 80% thankyouverymuch), but I adore salty cashews and crave almond and peanut butter almost daily.  But that’s neither here nor there.  <— pointless tangent much? For the people who (still) don’t like nuts, this recipe is for you.  It’s also for my fellow chocoholics. How cute are these mini chocolate chips? Chocolate Chunk Quinoa Granola *gluten free… Read more >

Sunday night family dinner

Kyle and I made a resolution this year to sit down to a real dinner together every Sunday night.  It may be hard on the weekends that I work, but we will do our best. Family dinner #1 – roasted broccoli, quinoa and barley, Field Roast smoked tomato loaf. I put 1 cup dry quinoa and 1 cup dry barley in the rice cooker before we headed out to play tennis together. I left it on the “keep warm” setting until it was time for dinner. Then I fluffed it up before serving.   The… Read more >
