Day 10: Day trip to town

Due to poor weather conditions, we didn’t have much desire to venture away from our hotel in Uruguay.  However, we did make it into town one day.   We walked there (tricked into thinking it was just a stroll down the beach) and it was drizzling nearly the entire time.  But at least we got to see Punta Del Este’s main attraction. Dear Joy

I may as well warn you now…this is going to be one of those posts that will make you drool.  A lot.   I am having a full blown love affair with joy the baker right now.   It’s unstoppable. Working then eating

Work food.     I didn’t take photos of my breakfast oats because they’re monotonous and (quite frankly) snooze-inducing at this point. Can I get a virtual high five for weaning myself down to ZERO pieces of gum?!  Heyooo!  More on that on my FODMAPs site. Post-work food. Herbed bread twists made from scratch [vegan].  They are like little pillows of carbohydrate heaven. Brown rice & veggie quiche [vegetarian, gluten free].  A twist on this recipe. Stuffing in Spring

  I rarely care about special holiday meals on day’s I work (usually I just reschedule holiday celebrations* as it suits my hospital schedule), but for some reason I was dead set on an Easter Dinner that didn’t involve reheating leftovers.  However, as I already shared, I was at the hospital all weekend.  Which meant Kyle ditched Santa Monica to spend the holiday with his parents.  Which meant I was in charge of providing whatever “special something” I wanted for myself.  Cooking a real meal (without the microwave) after 12+ hours of nursing is ludicrous. … Read more >
