All work

And no play makes Elise a repetitive eater. Rather than subject you all to the same exact meal (times twenty), I’ll show my hippie bowl once and move on to my work food. Quinoa, carrots, spinach, seitan, avocado, nutritional yeast, Bragg’s aminos. After a few bad days, where I was carelessly eating wheat and agave (FODMAPs no-no) like it was going out of style, I knew I needed to get my GI tract back on track. Feeling bloated (and a bunch of other less-internet friendly terms) is the worst. So! I did what I know… Read more >

Carbs with a side of carbs

More pasta?  What the?     Let me explain.  Kyle likes noodles.  And he really likes noodles with tomato sauce.  I think they’re okay, but Italian is really not my thing.  I make it every so often to appease him (also it’s probably the quickest and easiest meal to make).  Boil water.  Congrats, your a chef!  So yeah, here’s how I cheat and make him think I’ve turned water into wine ground beef into hearty vegan sauce.  When the noodles are almost done but still al dente, I drain the water and add two frozen veggie… Read more >

What I Ate

It’s been a long time since I did a “what I ate in a day” style post, but I feel like returning to my OG format for the a moment.  Here goes. Breakfast: Vegan & GF pancakes (made with Bob’s Red Mill mix and almond milk).  I didn’t use any kind of vegan egg substitute, I just left it out.  I also used only almond milk (rather than the water/oil combo they recommended). I topped it with warm peanut butter and banana slices.  Half the banana went into my mouth before it made it onto… Read more >

Pesto Post-o

Remember when I posted a photo of my pesto dinner and kept promising to share the recipe?    I never promised a timely post, but I’ve finally gotten my act together.   Since I’m not a chef, I’m not really sure about the proper measuring techniques on things like lettuce and fresh herbs.  My scale is like fistful, really big fistful, and double fisting it.  Not exactly Julia Childs status.  So I’m apologizing in advance for the way I describe the amounts I used.  Really Green Pesto [vegan, gluten free, FODMAPs free, nut free] Ingredients:… Read more >

Philly: Old Nelson on the go

After brunch, my parents had to head to the airport, but Kyle and I still had a few hours to kill. We filled the time with a long stroll through campus followed by a trip to the 30th street train station.  We bought SEPTA tickets to the airport and food for the flight.  I’m sorry (but not really?) to say, I didn’t make into a Wawa over the weekend.   For non-Philly readers, I’d liken the chain to 7-Eleven, but for me the nostalgia of getting both coffee and soft pretzels is what makes the… Read more >
