Recipes lately

I have a few recipes that I thought I should link to so you can make them too. Some are mine, some aren’t, but they are all delish.

This granola is still our staple every day granola. If it aint broke…

I made the maple dijon chicken from skinnytaste’s One and Done cookbook again (two weeks in a row means a recipe is a grand slam) and it was just as good the second time around.

And since the oven was already on…

I made heaps of roasted veggies for the week.

Which has made lunches easy! Here’s a link to my addicting Thai salads.

The kids loooove roasted veggies, especially the sweet potatoes and butternut squash, so we fight over those. 😛 Actually we fight over the Brussels sprouts and the avo too. Basically they like all the same things I do and our taste buds cost a fortune.

We are going to have to pay this house off stat because the grocery budget is only getting higher and higher.

I took one day off salads because I was in the mood for one of my epic smoked salmon creations. Enter cornbread waffle. I still have a few in the freezer. Prep game champ!

I had two of these because I was still hungry after the first. Nice try Elise, nice try.

This smoked salmon is a kind I’ve never tried before – from TJs. It’s covered in yummy peppery seasoning but doesn’t take away from the salmon flavor. I really loved it and would definitely buy it again. I’ll take a pic next time to show you guys.

The other cookbook I’ve been inspired by is Ina Garten’s Cook Like A Pro, which I borrowed from the library and haven’t been able to put down.

This is Charlie Bird’s farro salad from the cookbook, but I’m fairly certain it’s published out there on the interwebs if you want to find it and make it for yourself.

The kids loved it, even with the parsley, radishes, and baby arugula. Highly recommend!

And yes, I preempted the arrival of Spring buying the tomatoes, but they were on sale and so I just went for it. That’s what happens when you have a break in the storm and you think Winter is over. False alarm!

And last but not least allow me to remind you of THIS BANANA BREAD. I subbed in 1/4 cup coconut sugar for the stevia mix. Don’t you just love re-discovering your old recipes?!

And speaking of rediscovering…I found some raw brownies in the freezer! They are made with dates, walnuts, chia seeds and coconut and taste heavenly. I ate it straight from the freezer because that cold icy texture really does it for me (also it forces me to eat it slowly thereby making it last longer).

    I actually made a savory granola a week or so ago- basically a nutty granola without sweetner, and with salt/pepper and a smidge of rosemary. I made it because it was to use on salads! Yeah, sounds crazy but i had found a recipe/article and it’s freaky delicious!
    Ina’s recipes are always a sure thing :)) though it’s not so easy to find vegan ones (or adapt them if it’s like 50% of the ingredients need to be swapped)
    Actually her assistant has a great website, i made this greek grain salad and just left out the feta and used more olives. Lots of other great salads and veg recipes on her site
